Banana Bran Muffins | Day 11
Bran Muffins
1 1/4 cups Unbleached white flour
1 cup Quaker Unprocessed bran
1/2 cup Sugar or 1 cup dates for the sugar-free version
1 tbsp. Rumford baking powder
1 tsp. Coriander
1/4 tsp. Salt
3/4 cup Applesauce or crushed pineapples
1/4 cup Soymilk or coconut milk
2/3 cup oil
1/2 cup Water
1 tbsp. Ground flax or flax meal
1/2 cup Raisins or blueberries (optional)
Directions:
Combine flour, flax bran, sugar, baking powder, coriander, and salt in a large mixing bowl. In a smaller bowl
place applesauce, oil, and milk and mix well. Pour into the dry ingredients. Do not over-mix. Fill 12 muffins 2/3 full.
Bake 18 to 20 minutes or until a wooden pick inserted in center comes out with a few moist crumbs clinging to
it. Bake at 350ºF.
Bran Muffin Recipe
Nutritional Breakfast Muffin made with All-Bran Cereal!
Recipe Below
Mix 1 cup of boiling water with 1 cup of All-Bran cereal.
Add 2 eggs, 1 cup sugar, 1/2 cup oil, and 2 cups Buttermilk/Regular milk/ Almond Milk to the hot bran and mix together.
Next add 2.5 cups of flour, 2.5 teaspoons baking soda, and 1/2 teaspoon salt and mix together.
Finally, add 2 cups All-Bran cereal and mix together.
Preheat the oven to 400 degrees Fahrenheit and bake the muffins for 20 minutes.

I make these Cran-Bran muffins using a recipe from Midwest Living. Ingredients:
1 egg
1/4 cup vegetable oil
1 cup milk
1/2 cup packed brown sugar
1 1/2 cups all purpose flour
1/2 tsp sea salt
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp pumpkin pie spice (or cinnamon or apple pie spice)
1 cup whole bran cereal (not flakes)
1/3 cup dried cranberries
1/3 cup pecans, chopped
Topping:
1/3 cup packed brown sugar
1/4 cup all purpose flour
1/4 tsp pumpkin pie spice (or cinnamon or apple pie spice)
2 Tbsp cold butter
Bake at 400 degrees for 15-18 minutes.

Bran Muffins
I have been a long-time fan of my local bulk food store. They carry so many interesting and unique things that you don't find at the supermarket. When I saw this big bag of wheat bran for less than $1.50, my mind started racing with ideas about how I could use it. As a fan of the good old bran muffin, this was the first on my list to create with my wheat bran treasure!
1 1/2 cup wheat bran
1 cup buttermilk or sour milk
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 dried fruit (diced dates, raisins, diced apricots, dried cranberries - you could also use chopped walnuts or chocolate chips)
Preheat oven to 375 degrees.
Line standard muffin pan (one dozen) with liners or spray with non-stick spray.
In a large bowl, mix wheat bran and buttermilk/sour milk together. Let stand for 10 minutes.
In another bowl, beat together the oil, egg, brown sugar and vanilla. Add to the bran/buttermilk mixture and combine.
Sift or whisk together the flour, baking powder, baking soda and salt. Stir into the wet mixture until just blended. Fold in fruit.
Divide batter evenly between the 12 muffin cups.
Bake for 15-20 minutes or until tops spring back when gently pressed or a toothpick inserted into the middle of the muffins comes out clean.
Remove muffins from baking tin immediately and allow to cool on a wire rack.

Banana-Date Bran Muffins
Ingredients
2 extra large over-ripe bananas mashed
1/2 cup olive (or veg) oil
1/3 cup sugar (add more if you like it sweet)
2 extra large eggs
1 cup plain yoghurt
1 1/2 - 2 teaspoons pure vanilla ( I normally add extra)
1 1/2 cup all purpose flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup bran flakes
4-6 medjool dates pitted & chopped
Milk/cream to adjust
Nuts optional - see note
Method
Preheat oven to 350F. Mash the bananas, add in yoghurt, mix in the bran flakes and set aside. Sift together flour, baking powder, salt, spices and sugar. Whisk to blend evenly, then coat the chopped dates with the flour mix. Add the oil, eggs and vanilla to the bran mix. Blend together. Mix in the wet and dry ingredients making a smooth batter. Adjust with milk if the mixture is a bit dry and then fill the greased muffin pan or paper cup lined muffin pan. Bake in the middle rack on a convection setting if preferred for 25-30 minutes or until cake tester comes out clean. Makes 12 muffins.
Note
Nuts can be a choking hazard to kids, especially little bits that’s added into the muffin mix, I normally use a whole nut to decorate or abstain from using nuts if I’m baking for kids. On the other hand, if it’s for adults who love nuts I include it into the muffin batter.
Tips
The hand mixed muffin batter gives this batch a soft, light, airy and crumbly texture. Adjust sugar to taste, dates are quite sweet on their own so I normally add less sugar when using dates in my recipes and the combination of dates and bananas are enough to eliminate sugar totally which I sometimes do because I don’t care for extremely sweet things. These high fibre
muffins are great for lunch boxes, a quick grab and go breakfast or as an anytime snack and so simple and quick to make. The texture of ingredients will vary globally so sometimes you may end up with a drier batter, also because of the bran absorbing liquid ingredients so use milk or cream to adjust the consistency. When bananas get over ripe especially so in summer, do not waste them, freeze them in a freezer bag, then thaw and use in baking, it mashes up very easily and spreads evenly into the batter.
