How To make Banana Bran Pancakes
1 1/3 cups milk
2 eggs
1/4 cup vegetable oil
1 teaspoon vanilla
1/2 cup banana
1 1/2 cups Bran Chex cereal
1 cup all purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
In blender, process milk, eggs, oil, vanilla, and banana just to mix. Add bran cereal, process. Add remaining ingredients. Process to combine. Scrape sides of container. Let stand 5 minutes. Stir. Bake on preheated, lightly greased griddle over medium heat. Pour out enough batter to form 3" to 4" pancakes. Cook until edges are set. Turn. Cook until browned. Repeat with remaining batter. Refrigerate or freeze leftover pancakes with two squares of waxed paper between each. Reheat in toaster. Sallies comment:- I add a little more banana than this calls for. Oats Bran Pancakes | Gluten Free | Healthy Dessert
????Bran is the outer layer of the grain kernel and an excellent source of dietary fiber, particularly insoluble fiber. When bran is combined with oats which another good source of fiber it add to the fiber content of the recipe making it high on fiber, low on carbohydrates and an excellent healthy option for weight watchers????.
There is no better way of combining the above two food options to make a delicious, Healthy Pancake ???? that would be loved and relished by all????.
Ingredients:
* Instant Oats – ½ Cup
* Bran Powder (Wheat / Oats) – ½ Cup
* Apple – 1 Whole (Peeled & Chopped)
* Almond Milk / Low Fat Milk – 150 ml
* Egg – 1 Whole (Optional)
* Cinnamon Powder – ½ Teaspoon
* Baking Powder – ½Teaspoon
* Honey – 2 Teaspoon
* Vanilla Essence – a few drops (Optional)
* Oil – 1 Teaspoon (Preferably Olive Oil)
NOTE: Vegetarians can avoid eggs ❌????❌and add baking soda instead
Method:
1. Take a deep bowl, add oats, bran powder, chopped apple, cinnamon powder, baking powder, sugar, almond milk and mix together.
2. The mixture should be thick in consistency and not flowy.
3. Heat a non-stick pan and grease it with a little oil. Once the pan is hot enough pour a ladle full of mixture and allow it to cook from one side for a 3-4 minutes on a slow flame.
4. Flip the pancake and cook it from the other side again for 3-4 minutes on a slow flame.
5. Top it with a teaspoon or two of honey and enjoy.

Ingredients:
1 1/2 Cups Whole Wheat Flour (210g)
1 Tablespoon Sugar (16g) *Optional, don't add if using sweetened almond milk.
2 Teaspoons Baking Powder (9g)
1/4 Teaspoon Baking Soda (1.25g)
1 Ripe Banana
1 Teaspoon Vanilla Extract (5ml)
1 Tablespoon + 1 Teaspoon Olive Oil (20ml)
1 1/2 Cups Almond Milk (360ml)
Directions:
In a bowl, whisk together the flour, baking soda, baking powder, and sugar. Set aside.
In another larger bowl, mash the banana. Add the vanilla and olive oil, whisk until combined. Whisk in the almond milk.
Fold in the dry ingredients to the banana mixture and stir just until combined.
Heat a pan or griddle using medium to low heat, spray with cooking spray. Spoon the pancake batter onto the pan and spread into a circle if needed. When the surface starts to bubble and the edges of the pancake are dry, flip the pancake over to finish cooking. Repeat with the rest of the batter.
Serve warm.

Chunky Banana Bran Muffins

Ingredients
1 cup unprocessed wheat bran
1 cup buttermilk (shaken)
4 tablespoons unsalted butter, at room temperature
1/4 cup light brown sugar, lightly packed
2 extra-large eggs, at room temperature
6 tablespoons unsulphured molasses
1 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup raisins
1 cup large-diced bananas
1/2 cup chopped walnuts
Directions
Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.
