How To make BARBECUED LIMA BEANS
Ingredients
1-1/4
cup
lima beans, dried
1/2
each
onion, thinly sliced
1/2
teaspoon
salt
1/4
teaspoon
mustard, dry
1/2
teaspoon
vinegar
2
tablespoon
molasses
3
tablespoon
chili sauce
Directions:
Place the beans in a soup pot. Cover with water; broil 2 minutes. Remove from the heat, cover and let stand 1 hour.
Preheat the oven to 300 degrees F. Prepare a 1-1/2 quart casserole with non-stick pan spray.
Drain the beans, reserving 1 cup liquid. Combine the beans and the reserved liquid with the remaining ingredients and put in the casserole.
Cover and bake 1-3/4 hours. Uncover and bake 30 minutes longer, adding liquid if the beans seem dry.

Lima/Butter Beans
Ingredients:
1 lb. Large Dried Lima Beans
1 large Smoked Turkey Leg or Ham Shank
8 - 9 cups Chicken Stock or Broth, can use 2 tbsp of either Better than Turkey or Chicken Bouillon
Salt and Pepper to taste
How to Hot Flash Beans
Clean and sort your beans.
Rinse in a colander with cold water. Add the beans to a large pot and cover them with about 2 inches of water. Bring the water to a boil over high heat, leave the pot uncovered and cook the beans for about 5 minutes. Remove pot from the heat and soak the beans. Let the beans soak in the hot water for 1 hour. Drain the beans into a colander, rinse and then cook according to your this recipe. Enjoy!

Lima Beans with Smoked Ham Hocks and Cornbread

Butter Beans Recipe | How to make (Lima) Butter Beans and Rice
This is a recipe from Michelle’s Gram. It is rich and creamy and quite hardy. We enjoy this over rice, but it could be eaten alone as well. It does take time but it is rather simple to make!
• 4 Stalks of Celery Diced
• 1 Small White Onion Diced
• 8oz. Package of Diced Ham
• 2 Smoked Ham Hocks
• 1.5 LBS of Large Dry Lima Beans
• 12 Cups of Chicken Stock
• 1 TSP of Cajun Seasoning
• 1 TSP of Creole Seasoning
• 2 TBS of Olive Oil
Dice up the celery and onion.
In a large Dutch oven heat up the olive oil.
Sauté the onions and celery until tender, add in the diced ham.
Add your seasonings.
Once the ham is browned, add the beans, ham hocks and stock.
Cover the Dutch oven and let simmer.
When the beans are soft and tender remove the hocks to cool, this should take about 2.5 hours of simmering.
Remove any meat on the hocks and add to the pot.
Stir and allow to thicken.
Make your rice per the instructions on the package.
Once done, add some rice to a bowl and top with the beans!

ADD ONE LARGE CHOPPED ONION, WASH HAM HOCKS AND ADD TO POT. SALT AND PEPPER TO TASTE. COOK ABOUT 8 HOURS ON LOW OR UNTIL THE LIQUID IS CREAMY. SERVE WITH THE BREAD OF YOUR CHOICE.
