Welcome to a new series for 2022!
I have done an intro to this new series at the beginning - if you want to skip to the cookery part it starts about 10 minutes in.
We all enjoy cheap, tasty and filling meals and with the cost of living on the increase, many of us want to cook tasty home made meals on a budget.
I love to cook a hearty filling meal from scratch using healthy ingredients that we have in stock, along with a few processed foods here and there. For example we do enjoy using Vegetarian Sausages, Quorn or Soya Mince from time to time.
I also like to use some of the cookery skills that I learnt many years ago at school which I have found very useful throughout my life. Using cookery skills and the different cooking methods, one can learn to put together meals that look impressive and appetising to friends and family, taste absolutely great, are healthy too, but are in reality, very easy to make and put together even if you are shopping on a budget or like to be as frugal as possible, without compromising on flavour.
I am also using this series to pass on and teach you some of the basic cookery skills and nutritional knowledge that I have learnt over time. I am sure there are many viewers who have never cooked before - once you learn the basics you can apply the skills to a number of different ingredients and start to use your creativity to build dishes that suit your tastes. As with everything, practice makes perfect and I really hope that I can pass on some valuable cookery hints, tips and tricks in this new series of cookery videos.
The idea around this series of videos is to inspire you to try putting together tasty meals with the ingredients that you have in stock at home and to learn some of the skills. I also aim to encourage you to put together a store cupboard of ingredients that can be added to dishes to bulk them out and add flavour.
Each video contains an approximate breakdown of the cost of the ingredients. The costs will really depend on where you shop and how much you are willing to pay. We believe in getting a lot of our foods when they are on offer and making sure we have plenty of items in stock. I wouldn't say that we are preppers but when it comes to getting a bargain on those store cupboard items we probably think like the preppers do. Most of these recipes will make enough for 4 people but with a little tweaking will feed many more.
These videos are ideal for people cooking on a budget, people wishing to try vegetarian foods for the first time, people wishing to feed friends and family, students cooking for the first time or simply those of you wishing to try out a new recipe.
Because these videos are about improvising and being creative you will have to watch the video if you wish to recreate the dish. I am not weighing out any ingredients - this is in the spirit of simply throwing something together.
The basic ingredients that I have used in this recipe video are as follows -

Tinned Tomatoes from Lidl
Tinned Baked Beans from Morrisons
Onions
Carrots
Potatoes
Celery
Red Pepper
Vegetable stock powder - Marigold Swiss Bouillon
Black pepper
Chilli powder
Cumin Powder
Marmite or yeast extract
Water
The whole dish cost less than £4 - that's a main meal of 4 servings for less than £1 per person - home cooking is worth it if you are trying to save money and live as frugally as possible.

About the speaker: Before retiring as Director of the Plant Conservation Program at the Lady Bird Johnson Wildflower Center in 2017, Dr. Clary oversaw the Center’s native plant conservation program aimed at preserving common and rare Texas plant species in the Wildflower Center seed bank for future use, managing aggressive, invasive plants and stewarding rare and endangered Texas plant species. Dr. Clary has a bachelor’s degree in anthropology from Texas A&M University and a master’s degree in anthropology from the University of New Mexico. She also holds a doctorate from the University of Texas at Austin, where she studied speciation patterns, taxonomy and biogeography of yucca plants. While in New Mexico, she co-founded the Castetter Laboratory for Ethnobotanical Studies, a research lab devoted to the study of prehistoric subsistence and the origins of agriculture in the Southwestern United States.

1 jalapeño, chopped (about 1 ounce/30g)
1/2 zucchini, chopped (about 2 ounces/60g)
1 large clove garlic, chopped (about .5 ounces/10g)
1/3 sweet onion, chopped (about 2 ounces/60g)
1 cup (260g) vegan refried beans
1 teaspoon adobo seaesoning
10 mini street taco style tortillas
Spray oil
1/4 teaspoon chili powder
Salt & pepper
Adobo Cashew Dip
1/4 cup (30g) cashews, boiled or soaked overnight
1/2 cup (120ml) nondairy milk, unsweetened and unflavored
1/8 teaspoon salt, or to taste
1/2 teaspoon adobo seasoning
1 teaspoon nutritional yeast
Parsley or cilantro, for garnish
