How To make Asparagus Mozarella Quiche
1 1/2 Pounds asparagus -- trimmed
2 1/2 Cups nonfat cottage cheese
4 Ounces part-skim Mozzarella cheese
1 green onion -- chopped
1/2 Cup fresh parsley
1 egg
3 egg whites
1 Teaspoon mustard
1 1/2 Tablespoons grated Parmesan cheese
Coat 10 inch quiche pan with nonstick cooking spray. Cut asparagus into 2 inch pieces. Steam until tender, about 5 minutes. Cool and chop. Puree cottage chees e, Mozzarella, onion, parsley, egg, egg whites and mustard in processor. Fold i n chopped asparagus. Pour into prepared quiche pan. Sprinkle with Parmesan. Bak e in preheated 325 degree oven for 1 hour or until set. Serves 8. Recipe from " One Million Recipes CD"

8 ounces asparagus cooked
2 cups baby spinach leaves
6 eggs beaten
2 1/4 cup mozzarella cheese grated
2 tablespoons parmesan cheese grated (can stuff is fine)
2 cloves garlic minced
salt and pepper to taste

Quick and Easy Dijon and Asparagus Quiche ✨
Ingredients:
1 recipe Anna Olson’s Pie Crust
Tip: you can also use a sheet of puff pastry.
4 stalks asparagus
1/4 cup Dijon mustard
3 eggs
3/4 cup heavy cream
3/4 cup whole milk
2 tbsp butter
Method:
Roll pastry dough into a circle 1/8” thick and ~ 2” larger than your baking dish. Place in the baking dish and crimp the edges. Line the crust with parchment paper and pie weights (dried beans or a slightly smaller baking dish will work as well) and par bake at 400F for 8-9 minutes. Remove pie weights and cover the bottom of the crust with Dijon. In a frying pan, lightly sauté asparagus for a few minute, just until brightened. Place asparagus in the bottom of the crust. Mix 3 eggs with cream and milk and season with salt and pepper. Pour into pie crust, crumble some butter overtop and return baking dish to the oven for 25 minutes or until golden brown. (Note: if your crust is getting too crispy before the eggs have set, cover with aluminum foil).

Ingredients:
1 pie crust refrigerated
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham chopped
1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.
