2 Cups of dried apricots
2 Cups of desiccated coconut

Delicious healthy apricot balls recipe with goodness of dry apricots (also known as khubani), nuts, seeds & coconut. You can enjoy it as snack, light dessert or pack in kids lunch box as mid day snack. It is vegan & gluten free. They are also a great option for edible gifting on Diwali, Holi, Raksha Bandhan, Thanksgiving or Christmas etc.
1. The recipe is quite flexible as you can skip adding nuts if you want to make to these balls nut free & add some rolled oats instead.
2. Feel free to add any nuts like almonds, cashew, pistachio or seeds (flax seeds, sunflower seeds or pumpkin seeds etc) of your choice.

Place soaked drained apricots, chopped dates, desiccated coconut, chia seeds, pumpkin seeds and almond spread in a food processor. Whizz it up until a smooth and well combined. Apricot Coconut Balls | Exclusively Food Recipe
These soft apricot and coconut balls contain crushed peanuts, chunks of fluffy marshmallow, and finely chopped white chocolate. They are no-bake and easy to make, perfect for making with kids. For optimum flavour, we remove the apricot balls from the fridge about 15 minutes before serving.
MORE SWEEET RECIPES:
For accuracy, we use digital scales to weigh all ingredients. Volume measurements are given in Australian Standard cups (250ml) and spoons (20ml tablespoon, 5ml teaspoon).
