How To make Applesauce Cinnamon Muffins
1 1/4 c Oat Bran cereal; uncooked
1 c Whole wheat flour;
2 ts Ground cinnamon;
1 ts Baking powder;
3/4 ts Baking soda;
1/2 ts Salt
3/4 c Unsweetened applesause
1/2 c Honey;
1/2 c Vegetable oil;
1 Egg;
1 ts Pure vanilla extract;
1/4 c Walnuts;
Preheat oven to 375. Coat 12 medium-size cups with vegetables oil or line with paper baking cups. In medium bowl combine Oat Bran cereal, flour, cinnamon, baking powder, soda, and salt. In large bowl combine applesauce, honey, oil, egg, and vanilla. Stir in dry ingredients; mix well. Stir in nuts. Fill prepared muffin cup almost full. Bake 15-20 minutes or until golden brown. These applesauce muffins are a go-to snack in our family. My kids love it when a fresh batch of these are waiting for them after school. They’re easy to make, but that cinnamon sugar topping makes them hard to resist!
Easy Cinnamon Spiced Muffins with Applesauce | Gluten-Free & Vegan Options
Ultra fluffy, super soft, and full of cinnamon spice – these Applesauce Muffins are made without oil or butter making them healthy enough to eat for breakfast! You’ll taste the flavors of Fall with every bite of this spiced muffin recipe. They’re also super adaptable and can easily be made gluten-free, vegetarian, and even vegan.

INGREDIENTS
2 cups flour gluten-free 1-to-1 blend
½ cup coconut sugar
1 ½ tsp. baking soda
1 - 1 ½ tsp. apple pie spice to taste*
½ tsp. salt
1 cup applesauce unsweetened
⅓ cup pure maple syrup
2 eggs room temperature
1 tsp. vanilla
1 Tbsp. sugar optional
⅛ tsp. cinnamon optional
INSTRUCTIONS
Preheat oven to 350 °F.
Mix together flour, coconut sugar, baking soda, apple pie spice, and salt in a medium-sized bowl.
Whisk together applesauce, maple syrup, eggs, and vanilla in a separate large bowl.
Add dry ingredients to wet ingredients. Mix by hand until just combined.
Place muffin cup liners into 12 cavities of a regular-sized muffin tray. Spray each liner with non-stick cooking spray.
Evenly distribute the muffin batter into all 12 cups. They should end up being about ¾ full.
Whisk together cinnamon and sugar in a small bowl and sprinkle ¼ teaspoon over each of the muffins.
Bake muffins in preheated oven for 22-25 minutes, or until a toothpick when inserted in comes out clean.
Let cool to room temperature before serving. Enjoy!
RECIPE NOTES
Make your own Apple Pie Spice or substitute with 1 teaspoon cinnamon and ½ teaspoon nutmeg.
Use flax eggs or chia seed eggs if vegan or dairy-free.

Makes 12 muffins
Ingredients:
3 cups (270g) rolled oats
1 teaspoon cinnamon
2 teaspoons baking powder
1/4 teaspoon salt
1 cup (240ml) milk
2 eggs
1 cup (255g) unsweetened applesauce
3 tablespoons (60g) honey or maple syrup
1 teaspoon vanilla extract
1/2 cup (60g) dried cranberries – optional
Directions:
1. Preheat oven to 360F (180C).
2. In a large bowl, stir oats, baking powder, cinnamon and salt. Set aside.
3. In separate bowl whisk eggs, milk, honey, applesauce and vanilla.
4. Combine dry ingredients with wet ingredients. Mix until combined. Add cranberries or other additions that you like and mix.
5. Divide the batter evenly between 12 greased muffin cups or put paper muffin cups into muffin tin (optional) and spry the paper muffin cups with cooking oil.
6. Bake for 25-30 minutes or until golden.
7. Let cool before releasing from the tin.

1 tsp of vanilla extract (5ml)
1 tsp of cinnamon (2.5g)
