How To make Curly Maple's Applesauce Muffins
1 1/2 cups sugar
1/2 cup butter or margarine -- softened
2 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 cup applesauce
In a mixing bowl, cream sugar and butter by hand. Add eggs, one at a time, beating well after each addition. Combine dry ingredients. Add to the creamed mixture alternately with applesauce. Mix just unitl combined. Fill greased or paper-lined muffin cups 2/3s full. Sprinkle some sugar on top. Bake at 350 f. for 20-25 minutes. Cool on a wire rack.

Banana Bread Ingredients:
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp espresso powder
Pinch of Kosher salt
2 large eggs + 1 large egg yolk
3 well-ripened bananas
1/2 cup unsalted butter, room-temperature
1 1/4 cup granulated sugar
1/2 tsp vanilla extract
Method:
Preheat oven to 350 Fahrenheit.
In a large bowl sift all the dry ingredients; flour, baking powder and soda, espresso powder, and salt. Set aside
Cream together butter and sugar till light and fluffy.
Add eggs and vanilla extract to creamed mixture.
Cut bananas into medallions and mix into wet mixture till completely smooth.
Fold dry ingredients into wet mixture until just combined. Careful not to overmix here.
Bake off for 50-60 minutes, and cool slightly.
Maple Glaze Ingredients:
1/2 cup pure maple syrup
3 tbsp unsalted butter
1/2 cup powdered/confectioners/icing sugar
Method:
In a small pot over medium heat, melt butter and maple syrup together till homogenous.
Bring mixture to a boil for 30-60 seconds and pull off the heat.
Sift in powdered sugar and whisk vigorously till completely smooth.
Assembly:
Puncture bread with a knife several times along the top of the loaf.
Pour maple glaze over and let set to completely cool.

Cornbread Shepherdess Pie (Gluten-Free,Plant based)
A southern spin on an Irish dish, this dish will not leave you disappointed it's full of flavor and delicious!
Cornbread Shepherdess Pie (Gluten-Free,Plant based)
Ingredients
A drizzle of balsamic vinegar
1 onion peeled and chopped
2 cups of mushrooms
2 cups chopped carrots
1 cup frozen peas
1 cup of corn or more carrots and peas
1-2 tsp Worcestershire or low-sodium soy sauce
1 tbsp of garlic powder
2 tablespoons tomato paste
2-4 cups water (add more or less as needed)
1 or 2 low sodium veggie or not beef broth cubes
Salt and Black pepper to taste
2 tablespoons cornstarch + 2 tbsp water
(You can also add celery, a bay leaf or thyme to add more flavor.)
Cornbread topping (Adapted from FOK cornbread muffins)
1½ tablespoons ground flaxseed or egg replacer
1 cup unsweetened plant milk + 1tsp of lemon juice (I used vanilla soy milk)
½ cup unsweetened applesauce
½ cup agave or pure maple syrup
1 cup corn meal
1 cup oat flour
1/2 teaspoon baking soda (opt out if you use egg replacer)
½ teaspoon baking powder
Pinch of sea salt
Cooking and Preparation Instructions
Heat the nonstick skillet pot over medium heat. Add the chopped onions and mushrooms, chopped carrots. Cook until tender, about 10 – 15 minutes. Then add the garlic powder, and cook for another minute or so.
Add the tomato paste, broth cubes, and water as needed. Stir to combine. Continue cooking about 10 minutes. The liquid should reduce a little during this time.
Add cornstarch and water in a bowl. Stir to dissolve the cornstarch. Add this into the pot and continue on simmer until a thick sauce forms, about 5 minutes.
Add frozen peas. Stir to combine.
Pour the veggie filling mixture into the bottom of a large casserole dish. Top with cornbread mixture.
Cornbread mixture
In a bowl mix the wet ingredients and then add the wet, mix until combined.
Bake at to 375°F for 20-25 minutes, turn up to broil the last few minutes if you want the cornbread more browned.
