1 2/3 c Flour, all-purpose
1 1/2 oz Cornmeal, yellow
- uncooked 1 tb Baking powder, double-acting
3/4 lb Apples
- cored, pared, - finely chopped 1/2 c Corn, whole-kernal, frozed
- thawed 2 1/4 oz Cheese, Chedder, reduced-fat
- shredded 1/3 c Sugar, granulated
1 ds Cinnamon, ground
1 ds Nutmeg, ground
6 tb Corn oil
3 Eggs
- lightly beaten Preheat oven to 400F. Line 12 2-1/2" muffin-pan cups with paper baking cups; set aside. In large mixing bowl combine flour, cornmeal and baking powder. Add apples, corn, cheese, sugar, cinnamon, and nutmeg, stirring to combine. In small bowl beat together oil and eggs; stir into flour mixture. Fill each baking cup with an equal amount of batter. Bake in middle of even fro 15 minutes, until golded and tootpick comes out dry. Set pan on wire rack and let cool. Weight Watcher Exchanges: 1-1/2 Fat, 1/2 Protein, 1 Bread, 1/4 Fruit, 25 Optional Calories. Per serving: 214 calories, 5 g. protein, 27 g. carbohydrate, 9 g. fat, 67 mg. cholesterol, 160 mg. sodium, 110 mg. calcium, 1 g. dietary fiber. This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

Cheesy Corn Dog Muffins WW Friendly (Weight Watchers) Air Fryer Recipe With Points on all Plans???????????? I used my corn bread muffin recipe as a base and added to it to come up with these fun cheesy corn dog muffins. They are quick and easy to make and turned out great in the air fryer! They are low in points and kid friendly!
Makes 18 servings. MyWW SmartPoints per serving - Green: 3 SmartPoints / Blue: 3 SmartPoints/ Purple: 3 SmartPoints

Ingredients:
1 cup Plain fat free Greek yogurt
1 cup Unsweetened vanilla almond milk
2 Tbsp Sugar
2, large Eggs
1/4 cup Unsweetened applesauce
1 cup White self-rising flour
1 cup Yellow cornmeal
1/2 tsp Baking soda
1/2 tsp salt
6 hotdogs, cut in thirds (I used Ball Park Franks, Smoked White Turkey)
1 cup Great Value Finely shredded reduced fat fiesta blend cheese
Pickled jalapeno peppers (optional)
In a medium bowl, mix together flour, cornmeal, baking soda and salt. In another medium bowl, mix together yogurt, almond milk, sugar, eggs, applesauce and cheese. Slowly stir dry ingredients into wet, until combined. Fill muffin cups roughly 2/3 full, I used silicone baking cups. Cut 6 hot dogs into thirds and place a third of a hotdog down into the middle of the batter. Add jalapenos if desired. If using an airy fryer, cook at 325 for 8-10 minutes. For the oven, bake at 375 for about 20-25 minutes.

Its a very windy Sunday here in Southern California, so I decided to make a delicious and WW friendly crockpot meal of chili and cornbread. It ended up being 4 points for one serving of chili, 1 point for the reduced fat cheese (1 TBSP) and 5 points for a Jiffy Corn Muffin. This was delicious! Here is the recipe I made for the Corn Muffins (I divided mine in half to make 6 muffins, but the full recipe is for 12)
6 Jiffy Corn Muffins (1/2 recipe)
3/4 Cup Muffin mix
1 tsp apple cider vinegar
1 egg
approx 1/4 cup of almond milk (low calorie 30 calories)
1/8 cup unsweetened applesauce
But in sprayed muffin tins and bake 15 mins at 400 degrees. Enjoy!!
