Today I'm sharing with you one of my favorite cake recipes! A cozy vegan apple cake with 'buttercream' frosting. Super easy to make and perfect for the winter season :)

Ingredients:
2 apples, medium sized
juice of 1/2 lemon
200g spelt flour (7,05 oz ~ 2 cups)
100g oat flour (3,5 oz ~ 1 cup + 1 Tbsp)
150g sugar, raw (5,3 oz ~ 1/2 cup + 2 1/2 tbsp)
1 1/2 tsp cinnamon
1/4 tsp salt
2 tsp baking powder
1 tsp vanilla
80 ml vegan butter, melted (1/3 cup)
100g soy yogurt (1/3 cup)
250 ml non dairy milk (1 cup)
Frosting:
100g cashews, boiled for 30 min (3,5 oz = 2/3 cup)
1 Tbsp cold vegan butter or coconut oil
60 ml + 1 Tbsp coconut milk (1/4 cup + 1 Tbsp)
2-3 Tbsp maple syrup (or more if you like)
1/2 tsp vanilla
*you might tell that I created this recipe using grams, so the cup amounts are not precise. For the dry ingredients I'd recommend using the weighing method (oz or grams)

1 organic lemon
1.5 lb. (600g) apples
1/2 cup (110g) salted butter (or unsalted butter with a pinch of salt)
2 eggs
1/2 cup (100g) granulated sugar
1 3/4 cup (210g) all-purpose flour
2 teaspoons baking powder
Powdered sugar for dusting

Apple Walnut Caramel Cake
This Apple Walnut Caramel Cake is a mouthwatering rich dessert, full of flavor and texture, perfect for any time of the year. Soft and moist apple cake layers topped with a crunchy caramelized walnuts, filled with dulce de leche buttercream and topped with salted caramel sauce. The caramel walnut shards I used to decorate the cake not only look amazing but bring an amazing crispy touch too.

Ingredients
Makes about 12-14 servings
Walnut Crunch
1/2 cup (100g) light brown sugar
5 tbsp (70g) butter
3 tbsp (40ml) whipping cream
1 cup (100g) walnuts/pecans, toasted if desired and chopped
Apple Cake Layers
12 oz (340g) apples (about 2 apples), peeled, cored, cut in small pieces
2 cups (250g) all-purpose flour
2 tsp (8g) baking powder
1 tsp (6g) baking soda
1 tsp (5g) salt
2 tsp (6g) cinnamon
4 eggs
3/4 cup (150g) light brown sugar
1/3 cup (70g) sugar
1 cup (230g) vegetable/canola oil
1 tsp (5g) vanilla extract
Dulce de Leche Buttercream
9 oz (250g) unsalted butter, room temperature
1 can (14 oz-397g) Dulce de Leche, room temperature
1 tsp (5g) vanilla extract
Caramel Shards
1/2 cup (50g) walnuts/pecans, toasted if desired and chopped
1/2 cup (100g) sugar
2 tbsp (30ml) water
Caramel Sauce
1/2 cup (100g) sugar
2 tbsp (30ml) water
1/4 cup (60g) whipping cream
1 tbsp (14g) unsalted butter, room temperature
1/2 tsp (2.5g) vanilla extract
1/2 tsp (2.5g) salt

Apple Pecan Bundt Cake | Recipes | Central Market

Apple, walnuts and Skyr honey yogurt are used to make this light and moreish bundt cake.

Serves 12-16
Ingredients:
For the apple bundt cake
225g Skyr honey
1/2 tsp bicarbonate of soda
180g butter at room temperature, plus extra for greasing
200g golden caster sugar
1 tsp vanilla extract
3 medium free-range eggs
200g eating apples
375g plain flour
1 1/2 tsp baking powder
1 tbsp cinnamon
50g chopped walnuts
For the lemon and Skyr honey icing...
150g Skyr honey
4 tbsp icing sugar, sifted
Grated zest and juice 1/2 lemon
20g dried apples, roughly chopped
20g shelled walnuts, roughly chopped
Method:
1. Heat the oven to 160C/140C fan/gas 3. Mix the Skyr honey with the bicarbonate of soda, set aside.
2. Cream the butter and sugar together until light and fluffy, mix in the vanilla, then crack in the eggs one by one, mixing in each one before adding the next. Add the Skyr honey mixture and mix again until smooth.
3. Peel, core and chop the apples into 1.5cm dice, then toss in a large bowl with a little of the flour. Sift the rest of the flour along with the baking powder and cinnamon into the cake mixture, then stir carefully to combine. Fold through the flour-dusted apples and the walnuts.
4. Spoon the mixture into the prepared bundt tin, then bake for 45-50 minutes – it’s ready when it’s brown and risen and a skewer pushed into the centre comes out clean. When cooked leave the cake to cool for 10 minutes before turning out on to a wire rack to cool completely.
5. To make the icing, combine the Skyr honey, icing sugar and lemon juice until smooth. Spoon the icing over the cooled cake, top with the dried apple, chopped walnuts and lemon zest.
