Here is the best apple muffins recipe! Soft & moist apple muffin is the whole family favorite.
When the temperature drops, is there anything more comforting and delicious than a sweet apple muffin with a cup of tea? These apple muffins are full of apple bits with a hint of warm spices.
Perfect for tea time but also great to eat at any time.
Like my other cake recipes the sweetness of these muffins is perfect and not too sweet so if you like them too sweet, you can add two extra tablespoons of sugar into the mixture. Also if you like muffin with streusel (crumb) topping, make a mixture of sugar, butter and flour and top the muffins with it before placing in the oven. I personally don’t want to add extra sugar!
Ingredients for 12 muffins:
• 1 3/4 cup (220 g) all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ginger powder
• 1/4 teaspoon salt
• 2 cups peeled, cored and finely chopped apples (you'll need 2 large apples)
• 1/3 cup (80 ml) vegetable oil
• 3/4 cup (150 g) brown sugar
• 1/2 cup (120 ml) milk
• 1 large egg
• 2 teaspoons lemon juice
Bake in a preheated oven at 180°C (360°F) for about 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Apple Oatmeal Muffins- No Flour
These muffins are so easy to make! For a quick breakfast, snack, or treat, you will want to make this recipe. The apple oatmeal muffins are a one bowl recipe and use hearty oats to keep you feeling fuller longer. With no flour or white processed sugar, its a healthy recipe that tastes great.

Apple Oatmeal Muffins Recipe:
- 2 eggs, beaten
- 1 cup milk
- 1/2 cup applesauce
- 1 heaping cup apples, chopped
- 1/2 tsp. apple cider vinegar
- 1 tsp. vanilla
- 3 cups old fashioned rolled oats- ( or gluten free oats)
- 1 tsp. cinnamon
- 1 tsp. baking powder
(optional additions: raisins or dried cranberries)
(optional topping additions: chopped walnuts or pecans)
Topping Recipe:
- 2 tsp. coconut oil
- 1 tsp. ground cinnamon
- 4 TBSP. Turbinado sugar or Coconut Sugar
1. Preheat oven to 350 degrees Fahrenheit and grease 12 muffin tins.
2. Mix all wet ingredients in a bowl in order of ingredients. Add dry ingredients to bowl and continue mixing with a spoon.
3. Scoop mixture into muffin tins. (Use 1/4 or 1/3 cup for easy measuring)
4. Top with topping mixture.
5. Bake for 25-30 minutes or until golden brown. (25 minutes is perfect in my oven)
6. Let cool on baking rack. Store in refrigerator up to 6 days or freeze.
7. To eat: I heat in the microwave for 20 seconds since I like them better warm. Eat plain, with peanut butter, or honey. Enjoy!

Ingredients
▢1 cup 0% plain Greek yogurt (250g)
▢½ cup unsweetened applesauce (115g)
▢2 large eggs
▢¼ cup milk or buttermilk
▢2 teaspoons vanilla
▢1 cup brown sugar* lightly packed (210g)
▢2 teaspoons baking powder
▢1 teaspoon baking soda
▢1 teaspoon cinnamon
▢½ teaspoon salt
▢2½ cups whole wheat flour fluffed (325 grams)
▢2 Granny Smith or baking apples peeled and finely chopped (3 cups or 315 grams apples)
Cinnamon Sugar (optional)
▢2 tablespoons melted butter
▢3 tablespoons sugar
▢1 teaspoon cinnamon
Instructions
Preheat oven to 350 degrees F.
In a large bowl, whisk together yogurt, applesauce, eggs, milk, vanilla and brown sugar until smooth.
Add baking powder, baking soda, cinnamon and salt and whisk until combined.
Fold in flour and apples with a spatula, just until moistened and no flour remains.
Lightly grease a non-stick muffin pan or fill with paper liners, and fill muffin cups to the top (you can also make smaller muffins but they will bake more quickly).
Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean or with moist crumbs. Let cool for 5-10 minutes in the pan before removing to a wire rack to cool completely. (If using paper liners, they will be easier to remove after several hours has passed)
Cinnamon Sugar (optional)**
Brush butter over tops of slightly cooled muffins.
Stir together cinnamon and sugar. Sprinkle over muffins before serving.
Store muffins uncovered at room temperature on the day you bake them. To store longer, place in an airtight container and refrigerate up to 5 days or freeze up to 3 months.

APPLE PIE MUFFIN RECIPE
Ingredients:
For muffins:
3 cups ground oats (300g)
2 teaspoons ground cinnamon
1/2 cup Greek yogurt (145g)
1/2 cup honey (170g)
1/2 cup applesauce (130g)
2 large eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 cup grated apple (150g)
1 cup diced apple (120g)
For the crumble:
2 tbsp ground oats
2 tbsp quick oats
1 tbsp coconut oil
1 tsp honey
1/4 tsp ground cinnamon
Preparation:
In a bowl, combine dry ingredients first, ground oats, ground cinnamon, baking powder, baking soda and salt.
In another bowl, combine wet ingredients eggs, honey, Greek yogurt and applesauce.
Mix dry and wet ingredients together to combine. Do not over mix the batter.
Add the apples and gently fold in.
Grease the muffin pan with some olive oil or melted coconut oil.
Spoon the batter into the muffin holes, and spinkle the crumble.
Bake at 425F (220C) degrees for 5 minutes, then lower the heat at 375F (190C) degrees and bake for another 15-20 minutes.
Let it cool in the pan for 10 minutes, then transfer to the wire rack and let cool completely.

Wet Ingredients
¾ cup non-dairy milk any
¾ cup sugar
3 tablespoons olive oil or other vegetable oil
2 teaspoons vanilla extract
Dry Ingredients
2 cups all-purpose flour or 50% all-purpose and 50% whole wheat flour
2 teaspoons baking powder
½ teaspoon baking soda optional
1 pinch salt
Optional Topping
1 teaspoon cinnamon
2 tablespoons sugar
Bake at 350°F or 180°C for 27 minutes, until the muffins are golden-brown on top and a toothpick inserted in the center comes out dry.
