How To make Applachian Stack Cake
MARTHA WHITE'S SOUTHERN SAMP:
1 c Shortening
3/4 c Molasses
3/4 c Sugar
2 Eggs
1/4 c Buttermilk
6 c Martha White All-Purpose
-Flour 1 ts Baking soda
1 ts Cinnamon
1 ts Nutmeg
1 ts Ginger
Dried Apple Filling, below Preheat oven to 350. Cream shortening, molasses, and sugar together in large mixing bowl until light and fluffy. Add eggs; beat well. Blend in buttermilk. Sift flour, soda, cinnamon, nutmeg, and ginger together. Add dry ingredients to creamed mixture; beat well. Divide dough into ten equal portions. Draw an 8-inch circle (use outline of 8-inch round baking pan) on waxed paper. Roll out one portion of dough to fit circle. Slide dough and waxed paper onto baking sheet; remove waxed paper while still warm and place on wire racks to cool. Repeat procedure with remaining portions of dough. Stack cool layers on serving plate, spreading dried applef illing between layers. Do not spread filling over top layer. Cover tightly and store several days before serving for moistest cake and best flavor. DRIED APPLE FILLING ~~~~~~~~~~~~~~~~~~~ 8 cups dried apples 5 1/3 cups water 1 cup sugar 3/4 teaspoon cinnamon 1/2 teaspoon nutmeg Combine apples, water, and sugar in large saucepan. Bring to a boil over medium heat. Cover, reduce heat to low and simmer 30 minutes or until tender. Mash thoroughly. STir in cinnamon and nutmeg; cool completely. -----

Kentucky Applachian Stack Cake
Kentucky Appalachian Stack Cake
Ingredients:
1 cup butter
1 cup sugar
1 cup molasses
1/4 cup milk
4 beaten eggs
4 cups four (sifted)
1/2 tsp. cloves
1/2 tsp salt
1/2 tsp soda
2 tsp baking powder
Filling:
3 cups of applesauce sweetened with sugar and cinnamon to taste.
Directions:
1. Preheat oven to 350*.
2. Sift all the dry ingredients.
3. In a mixing bowl on medium speed cream together the molasses, sugar and butter until light and fluffy.
4. Beat the eggs with a fork and add to the milk.
5. Add the flour and alternate with the milk and egg mixture ending with the milk until smooth. Don’t overmix.
6. You will need six 9” cake pans greased and floured.
7. Divide the batter equally into the cake pans, about 1 cup each.
8. Bake for 12-15 minutes.
9. Measure about 3 cups applesauce in a bowl, sweeten with sugar and spice to suit your taste.
10. Layer the cake with applesauce spread between the layers.
11. Keep refrigerated in an airtight container. Best to let set for a day or two before serving.
Serve plain or with a little whipped cream. Enjoy!!!

Old-Fashioned Apple Stack Cake (Vol. 2 Cookbook)
Layers:
1 1/4 CUP SHORTENING
2.5 CUP SUGAR
2 EGGS
1/2 CUP SORGHUM MOLASSES
1/2 CUP BUTTERMILK
1 TSP. EACH CINNAMON & GROUND GINGER
1/2 TSP. NUTMEG
1 TSP. VANILLA
5 CUPS WHITE LILY SELF-RISING FLOUR
Cream shortening and sugar until fluffy add eggs-mix.
Add remaining ingredients in order listed above. Add
flour 1 cup at a time mixing well after each addition.
Place one cup of mix in well-greased 8” round cake
pans or 1 ¼ cups if using 9” pans -bake 20 minutes at
350 degrees. Makes 5-7 layers depending on pan size.
Option: If using all-purpose add 1/8 cup baking
powder and 2 tsp. salt.
Apples:
5 CUPS DRIED APPLES
3/4 TSP. CINNAMON
3/4 TSP. NUTMEG
1/2 TSP. ALLSPICE
1 1/2 STICK OF SALTED BUTTER
3/4 CUP BROWN SUGAR
3 CUPS WATER
Combine the above ingredients in a large pot and
simmer on low until the apples are semitransparent
and soft. Place filling in between each cake layer and
on top of cake. Let it sit for at least 24-48 hours and
allow to soak before serving in a cool dry area.
Refrigerate after that but wrap airtight. Important:
bring to room temperature before serving.

No Bake, Apple Stack Cake
My Granny never had an official name for this cake but No Bake Apple Stack Cake fits perfectly.
Old-Fashioned Appalachian Stack Cake with Dried Apple Filling
Old Fashioned Stack Cake:
3/4 cup butter
1/2 cup sugar
2 eggs
1 cup molasses
1/4 tsp soda
1/2 cup buttermilk
1/4 tsp salt
1/4 tsp cloves
3/4 tsp allspice
3/4 tsp cinnamon
3 cups flour
1 tsp baking powder
cream butter and sugar together and mix well
add eggs and molasses and mix well.
add soda to buttermilk and mix into butter and sugar mixture
Add alternately with milk and butter beginning and ending with dry ingredients
bake in 6 or more thin layers
at 350 degrees for 10-12 minutes
Filling:
1 1/2 lbs of dried apples
1 1/2 cups of sugar
2 1/2 cups of water
1/2 tsp each : nutmeg, allspice, and cloves
1 tsp cinnamon
cook first three ingredients together and when almost done add in last 4 ingredients.
put into food processor and blend
let cool
spread between layers of cake
place plastic wrap all over cake and place in refrigerator for at least 24 hours
