How To make Amarillo Chili
4 Bacon,slices,1/2" pieces
2 Onion(s)
1 Garlic clove
1/2 lb Pork shoulder,coarse grind
1 lb Beef round,1/2" strips
1/2 lb Beef chuck,coarse grind
4 cn Green chiles,whole
1 tb Red chile,hot,ground
2 tb Red chile,mild,ground
1 t Oregano,dried,pref. Mexican
1 1/2 ts Cumin
1 1/2 ts Salt
12 oz Tomato paste
3 c Water
16 oz Pinto beans
1. Fry bacon in a large, deep heavy pot over medium
heat. When the bacon has rendered most of its fat, remove the pieces with a slotted spoon, drain on paper toweling and reserve. 2. Add the onions and garlic to the bacon fat and cook
until the onions are translucent. 3. Add the pork and beef to the pot. Break up any
lumps with a fork and cook over medium-high heat, stirring occasionally, until the meat is evenly browned. 4. Stir in the remaining ingredients except the beans
and the bacon. Bring to a boil, then lower the heat and simmer, uncovered, for 2 hours. Stir occasionally. 5. Taste and adjust seasonings. Stir in the beans and
the bacon, and simmer for 1/2 hour longer.

Sugar Rush Amarillo Chilli Test
Sugar Rush Amarillo is an amazing tasty version of the Sugar Rush Peach, grown it this seaon and it looks amazing, had to try it
This plant is huge and will need a few plant stakes due it being a gangly Baccatum. In a pot it grows to over 100 cm in height and it will grow even bigger if you plant it in the ground. Very easy to grow. The pods have a roundish shape and they start off a light lime green colour and end up a beautiful warm yellow/orange colour.
Like many of the Baccatum varieties, they have a very long season and produce lots of these amazing chillies/peppers during the season.

Very thick walls and so crunchy, amazingly very sweet and an extremely juicy. One of the best tasting chillies we have ever tried they are BEAUTIFUL
Initially get a burn in the back of the throat and it builds a little as it moves forward, medium heat with a deep burn but doesn’t go for a while. Love a deep burn
Easy to grow, they get pretty big so if space limited then would pass BUT has a delicious flavour and now one of our absolute favourite chilli varieties. We can only recommend this fantastic chilli.

Aji amarillo -- is this pepper sweet or super spicy hot? -- let's find out
Growing what I bought as aji amarillo (Capsicum baccatum) pepper in zone 9b, Sunset zone 15 in Northern California. WARNING: most aji amarillo peppers are SPICY HOT! and I don't know what's up with this one. Delicious though. I am saving the seeds. And I'll try to overwinter it.

This is the most beautiful salad! This recipe is modified from Peruvian Causa, the only difference there is no Aji Amarillo chili in this recipe as it is not available. So in this recipe I show the alternative yet closest way to get that Causa taste without Aji Amarillo. It tastes delicious, and if you like potato chicken salad you must try this unique flavor.
Ingredients:
1 Orange Capsicum (Alt. 1/2 yellow+1/2 red capsicum)
1 Habanero chili (Alt. Jalapeno)
1 Tbsp Olive oil
1 Tbsp Lemon juice
1/2 Tsp Salt

Salt to taste
4 Tbsp Oil
