How To make Almond Rocca
1 c Pecans, chopped (we use
-chopped almonds on some -batches) 3/4 c Brown sugar (packed)
1/2 c Butter or margarine (butter
-makes it richer) 1/2 pk (6 oz size) semisweet
-chocolate chips. (1/2 cup) Almond Rocca: This is not for Almond Roca, yet it is close enough and it is real easy. In fact my 14 year old daughter has been making it by herself at christmas for the past 4 years. Hope this will meet your needs. It comes from the Betty Crocker cookbook, so you may have it on hand already. Toffee: Butter square pan, 9x9x2 inches. Spread chopped nuts in pan. Heat sugar and butter to boiling, stirring constantly. Boil over medium heat, stirring constantly, 7 minutes (watch it real close the last minute or two). Immediately spread mixture evenly over nuts in pan. Sprinkle chocolate pieces over hot mixture; place a baking sheet over pan so contained heat will melt chocolate. Spread melted chocolate over canndy. While hot, cut into 1 1/2 inch squares. chill until firm. Now for the changes we use. When we are going to be giving this as a gift, we melt another 1/2 cup of chocolate in the microwave. Use an 7x7x2 pan (or smaller than the 9x9x2). Spread the melted chocolate on top of the buttered pan that is covered with the nuts. After the chocolate is spread on top, sprinkle more nuts on top, while chocolate is still warm. Then cut into small sizes. After the candy is set, remove from the pan and wrap individually with desert foil. I get mine at the bakery supply, or a craft shop.

Almond Roca
INGREDIENTS
• 1 cup butter (unsalted)
• 1/2 cup sugar
• 1 cup chocolate chips (any chocolate chips of choice)
• 1/2 cup raw almonds (Chopped roughly)
PREPARATION STEPS
1. Line a small square pan or loaf pan with parchment paper and spread out 1/4 cup of the chopped almonds over the bottom. Set aside.
2. In a small saucepan, combine your butter and sugar. On low heat, heat up until the butter has melted and the sugar has dissolved. Stirring regularly, once the mixture begins to bubble, add your candy thermometer into the center of the mixture. Continue to stir every 30 seconds, until the thermometer reaches 300F (hard crack) (286F at my altitude ) Remove from the heat.
3. Continue stirring continuously to ensure the butter and sugar do not separate. Pour into the lined pan and let sit for 5 minutes.
4. After 5 minutes, top with your chocolate chips evenly over the top. Cover the pan with tin foil and let sit for 5 minutes. After 5 minutes, remove the tin foil. Using a rubber spatula, spread out the chocolate evenly over the toffee. Once spread, top with remaining chopped almonds. Refrigerate for at least 2 hours, or overnight. Once set, use a sharp knife and slice into pieces.

In this episode of In The Kitchen with Matt I will show you how to make Almond Roca. This homemade almond roca recipe is fairly easy to make with very few ingredients. Almond Roca is essentially an English Toffee that uses almonds, but they are very close to the same. And some people use the names interchangeably. This is a family favorite treat to have during the Holidays, if I can make it you can make it, let's get started!

Ingredients:
1 pound of butter (4 sticks) (450g)
1/3 cup of water (80mL)
2 Tbsp. of light corn syrup (40g)
2 cups of white granulated sugar (450g)
1 cup of almonds (I use 1/2 cup slivered and 1/2 cup roasted)
11.5 ounces of milk chocolate chips (or dark, semi-sweet) (330g)

Ingredients:
250g butter
1 cup brown sugar
3 tbsp water
2 tbsp glucose syrup
1 cup slivered almonds
Add in the butter, sugar, water and glucose syrup to a large pot. Heat it on medium to low heat, and it will start melting.Ensure you keep stirring it. It will start bubbling and once it reaches a golden brown colour, add in the almonds and mix really well. Pour it onto your Pyrex or baking tray with a piece of baking paper, and spread it out thinly.Let it set for about 30 minutes.Snap into pieces and store in an air tight container.

take 2 sticks of unsalted butter at room temperature
add 1/2 cup brown sugar
1/2 cup granulated sugar
mix for 2 minutes until fluffy
now add 1 egg
1 teaspoon almond extract
1/4 teaspoon salt mix to combine
once combined add:
2 cups all purpose flour
mix until flour is combined
grease a 9x13 baking dish
add the flour mixture to the dish and spread it out.
Use yours hands to help press the dough down!
bake at 350°F for 13 to 15 minutes
***once done baking turn the stove off***
immediately add 1 +1/2 cups of chocolate chips to the dough
return the tray to the oven for 10 to 15 seconds --- this is to help melt the chocolate!
keep the oven turned off when you return the tray with chocolate chips on top.
very gently using a spatula spread the melted chocolate chips out
add 1/2 cup sliced almonds on top
allow the chocolate to set for a couple of hours - I usually leave it out on the counter to set for 2 to 3 hours
once the chocolate has set slice and enjoy!
