How To make Almond Praline Bell
-Nancy Speicher DPXX20A 1 c Blanched almonds
1 1/3 c Granulated sugar
2/3 c Light-brown sugar; packed
1/3 c Honey
1/3 c -cold water
6 tb Butter
1 Lemon; cut in half
1. Preheat oven to 300F. Butter inside of 9", 10-cup decorative
mold; or use a 10-cup bowl. Grease a large cookie sheet. On another cookie sheet, toast almonds until golden brown - about 20 minutes. In blender or food processor, grind almonds (makes 1 1/2 cups). 2. In a heavy, 3-quart saucepan, combine granulated sugar, brown
sugar, honey and water. Cook, stirring with a wooden spoon, until sugar is dissolved. 3. Cook, uncovered and without stirring, to 300F on candy
thermometer, or until a few drops of syrup in cold water form hard, brittle threads. 4. Remove from heat; add butter and ground almonds.
5. Pour into prepared cookie sheet. Using the 2 lemon halves and
working quickly, smooth out and push from the center to the edge of the cookie sheet until the brittle is 1/8" thick. 6. Lift brittle off the sheet before it is completely cooled and
hardened, and mold it against the inside of prepared mold. 7. Cool completely - about 2 hours. Unmold just before it is to be
served. 8. To unmold: With spatula, carefully loosen candy from pan; remove.
Makes 1 large bell. Note: Leftover pieces can be kept in a closed jar at room temperature, or wrapped in aluminum foil. From McCalls Cookery No. 13

- 1 cup Cake Flour
- 1/2 cup White Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Fine Salt
- 1.5 Instant Coffee Powder
This recipe yields 12-16 cup cakes - depends of sizes

Praline Chocolate Mousse Cake
Hazelnut Praline Chocolate Mousse cake recipe (16cm cake)
Praline paste
150g sugar
75ml water
150g hazelnuts
if it is difficult to process the caramelized hazelnuts into paste, add 1 - 2 tsp neutral flavour oil
Chocolate sponge cake (pan size: 36 x 22cm or 14 x 9 in)
30g dark chocolate
30g butter
40g (ml) milk
3 egg yolks
30g cake flour (or all purpose flour)
15g cocoa powder
3 egg whites (I'm sorry. There is a typo in a video, it's actually 3 egg whites instead of 4)
60g sugar
Chocolate mousse
55g - 65g dark chocolate
35g hot heavy cream
1 gelatine sheet (1.5g)
1 tbsp milk
125g cold heavy cream, semi whipped
Praline mousse
55g praline paste
1 gelatine sheet (1.5g)
1tbsp milk
125g cold heavy cream
Chocolate glaze
40g sugar
60g water
15g glucose syrup (or corn syrup)
10g cocoa powder
2 gelatine sheets (3g)
Pour the glaze mixture at 30-35C over the cold cake, then put the cake back into the fridge for 15 - 30 minutes and unmold the cake
You can soak the sponge cake sheets with espresso or milk and decord the cake top as you like

The copper sugar pan I used:

INGREDIENTS
50 grams almonds
100 grams sugar
50 ml water
a few drops of red food coloring
Fast explanation:
Bake the almond first in the oven for 10 minutes at 190 degrees Celsius.
Make the syrup and cook it to 124 degrees Celsius then turn the heat off.
Off the heat, stir the almond in and keep mixing with the sugar until the sugar solidifies.
lay on a silicon mat separate the almond from the leftover sugar.
repeat the coating process twice more.
To finish bake the praline in the oven at 70 degrees Celsius for 30 minutes.
My tip: at the second coating just. simply make and cook the syrup, place the almonds in a stainless steel bowl and when the syrup is ready pour it over the almond. mix with a spatula first then swirl the bowl around to create an even coating.
