1 tb Butter
4 tb Sugar
1 dr Lemon juice
Blanch almonds. Put butter, sugar, and almonds in frying pan and brown almonds to light-coffee color, stirring constantly with wooden spoon. Add dro of lemon juice to keep sugar from srystallizing. Pour onto a buttered marble slab, a buttered platter, or buttered baking sheet. Spread out evenly and let cool. Break into pcs., or crumble to use on tarts or ice cream. -----

Iată rețeta mea de Buturuga REGALA de Craciun, deloc complicat de făcut. Este un tort compus dintr-un mousse de ciocolată, un blat cu migdale și un strat crocant de pralină cu sicrêpes dentelles .
Acest tort este prezent in aproape toate cofetariile din Franta (Gâteau Royal)
????Blat cu migdale:
-120 g pudră de migdale
-4 albusuri
-125 g zahăr
???? Pralina crocanta:
-10 clătite de dantelă (rețineți, sunt 2 per pachet)
-60 g pralină
(reteta de pralina o gasiti aici: ???? )
-80 g ciocolata cu lapte
???? Mousse de ciocolata:
-180 g ciocolată neagră sau cu lapte
-50 g zahăr
-4 galbenusuri (ceea ce fac 3 oua intregi la final pentru reteta)
-30 cl smantana lichida integrala (30% grasime)
✍ Faceti blatul: Separati albusurile de galbenusuri, rezervati cele 3 galbenusuri pentru mai tarziu
Albusurile se bat pana incep sa fie spumoase, se adauga zaharul si se bat in continuare. Albusurilel trebuie să fie netede și strălucitore
Incorporati delicat pudra de migdale in albusurile de zapada, ridicand albusurile batute bezea, pentru a retine cat mai multe bule de aer.
Se intinde pe o tava acoperita cu hartie de copt, pana la o grosime uniforma, si se coace 15 min la 180°C
Scoatem din cuptor, lasam sa se raceasca apoi scoatem hartia de copt.
Tăiați două fâșii de blat: -una de 25 * 7,5cm
-a doua de 24*6,5cm
✍ Faceți crema de mousse:
Bateți gălbenușurile cu zahărul. Veți obține un amestec spuma clar.
Topiți ciocolata la cuptorul cu microunde sau la bain-marie și adăugați-o la acest preparat, lăsați-o să se răcească la temperatura camerei
Bateți smântâna lichidă, pentru a obtine o frisca, apoi adăugați-o în amestecul de ciocolată.
Se toarnă crema de mousse într-o formă speciala de buturuga.
Atentie!!! daca nu aveti tava speciala ptr buturuga, puteti folosi si o forma de chec.
✍ Se face crocantul: se topeste ciocolata cu lapte (la bain-marie sau la microunde), apoi se incorporeaza pralina. Se incorporeaza clatitele de dantela zdrobite, se amesteca cu o spatula.
Întindeți amestecul de praline peste prăjitura de 25 * 7,5 cm, apoi puneți dedesubt cealaltă prăjitură de 24 * 6,5 cm.
Asezam biscuitul cu stratul de pralina sub crema de mousse
Se da la congelator sa se intareasca, cel putin 4 ore.
Scoateți tava din congelator cu 4 ore înainte de a degusta.
Pudratii cu pudră de cacao sau decorațiuni de ciocolată

Los macarrones son el postre francés clásico más popular, pero también uno delicado que requiere cierta técnica para obtener buenos resultados.

Estos macarrones están rellenos con un delicioso ganache hecho con mango y maracuya. Estoy segura que les van a encantar.

Receta Macarrones Con Mango y Maracuyá
Masa para Macarrones
60 g claras de huevo ( 1.5 huevos)
4 g claras de huevo en polvo ( ½ cda)
1 g ácido cítrico ( ⅛ cdta)
1 g colorante en polvo soluble en agua ( ⅛ cdta)
134 g azúcar glass ( 1⅛ taza)
190 g harina de almendras ( 1½ taza)
52 g agua ( ¼ taza)
160 g azúcar ( ¾ taza)
Ganache de Mango y Maracuyá
15 g jarabe de glucosa ( 1 cda)
300 g puré de mango ( 1⅓ cup)
120 g puré de maracuyá ( ½ cup)
200 g chocolate blanco ( 1¼ taza)
60 g mantequilla de cacao

60 g egg whites (1.5 eggs)
4 g powdered egg whites (½ tbsp)
1 g citric acid (⅛ tsp)
1 g water soluble powdered food coloring (⅛ tsp)
134 g icing sugar (1⅛ cup)
190 g almond flour (1½ cup)
52 g of water (¼ cup)
160 g sugar (¾ cup)
Mango and Passion Fruit Ganache
15 g glucose syrup (1 tbsp)
300 g mango puree (1⅓ cup)
120 g passion fruit puree (½ cup)
200 g white chocolate (1¼ cup)
60 g cocoa butter
