How To Make Home Made Amaretto: Two Versions Blind Taste Tested Against Disaronno
Time for something a little sweeter. This week we are making Amaretto, in fact, we are making two different versions of Ameretto.
These turned out a WHOLE lot better than I thought they would. But I wanted to blind taste them against Disaronno anyway and see how they faired.
--------------------------
Recipe One
Make a syrup from:
1 cup of water
1 cup of white sugar
1/2 cup of brown sugar
Let it cool and add too:
2 cups of vodka
2 tablespoon of almond essence
2 teaspoons of vanilla essence
Bottle it!
-------------------
Recipe Two (my version):
Macerate the following for 2-4 days:
1 1/2 tart apricots. tinned is fine if they are not cooked. Fresh would be better.
50 grams or sliced almonds
2 cups of 50% neutral spirit
Make a syrup from:
1 cup of water
1 cup of white sugar
1/2 cup of brown sugar
Let the syrup cool
Add the syrup to the maceration and add:
2 Table Spoons of Almond essence
2 teaspoons of vanilla extract (with seeds in)
Let macerate for another 2-4 days
strain and add lemon or lime juice to taste. It should be imperceptible but used to add a little freshness and balance out the sugar. I used 1/2 teaspoon fresh lemon.
Strain and bottle. Then enjoy!

The Secret to Homemade Amaretto
My homemade amaretto recipe utilizes mahlab instead of almonds. Like many spices and seasonings mahlab contains amygdalin - don’t worry, you’d have to consume a lot to have experience any effects but wanted to do my due diligence in just reiterating what I say in the video: do not consume mahlab raw just to be safe (as always do your research and proceed with caution) and be sure to roast them above 300F for 10 minutes or longer.

This amaretto uses all natural ingredients with no food coloring. It will mellow in taste and color over time and may have sediment at the bottom. See my video below for using wine fining agents if you want to clarify your amaretto or other homemade liqueurs.
