How to Make Almond Joy Cookies | Desserts | Well Done
Inspired by the favorite almond, coconut, and chocolate candy bar, these loaded Almond Joy Cookies are sure to steal the show on any holiday cookie platter or cookie swap they show up at.

INGREDIENTS
1 cup packed light brown sugar
1 cup granulated sugar
1 cup (4 oz.) unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups (about 9 5/8 oz.) all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
2 1/2 cups semisweet chocolate chips
1 cup sweetened shredded coconut
1 cup lightly toasted sliced almonds

Mini “Almond Joy” Pies State Fair Winner!
Almond Joy Mini Pies
Donna first made this recipe for the 2022 Maryland State Fair and won the blue ribbon and a special award. You’ll agree that it is well deserved!

Ingredients:
Favorite refrigerated pie crust
2 eggs
1 can (14 ounces) sweetened condensed milk
¼ cup butter (melted and cooled)
1 teaspoon almond extract
¼ teaspoon salt
¼ cup flour
1 package (14 ounces) sweetened shredded coconut (divided)
2 cups favorite chocolate chips
4 tablespoons heavy whipping cream
Directions:
Preheat oven to 350 F
Prepare pie crust for a 9 inch pie and refrigerate while preparing the filling.
In a large bowl, beat the eggs, sweetened condensed milk, butter, almond extract and salt. Stir in the flour. Reserve ½ cup of the coconut and add the remaining coconut to the filling.
In a small bowl, microwave the chocolate chips in 15 second intervals until slightly melted. Stir in the whipping cream until smooth.
Spread the melted chocolate on the bottom of the pie, saving some for the topping.
Add the filling to the pie. Top with the remaining coconut.
Bake for 35-45 minutes or until golden brown. Allow to cool before serving. Refrigerate leftovers.

#5 No Bake Almond Joy Pie
14 ounce can sweetened condensed milk
14 ounce bag sweetened coconut flakes
3/4 cup whole almonds, toasted (I like more)
2 cups powdered sugar
6 ounces of melting chocolate (I used chocolate chips)
Oreo cookie pie crust ( homemade or store bought)
Mix condensed milk, coconut, almond slices in a bowl until well blended. Pour mix into prepared pie crust. Top with melted chocolate and garnish with more almonds. Enjoy!
