How To make Chocolate Almond Torte
1/2 cup butter
1/2 cup sugar
8 eggs
8 egg whites
1/2 lb. pitted dates - chopped finely
1/2 lb. unblanched almonds - chopped finely
5 oz. unsweetened chocolate
1 Tbsp. vegetable oil
grease with vegetable oil one 10" spring-form pan and line with greased wax paper chop nuts and dates. Process chocolate in food processor or grate on the large cut of food grater
In a large bowl cream butter and sugar until light and fluffy. add egg yolks one at a time.
Fold in nuts, dates and chocolate pieces
In another bowl whip the egg whites until they form soft peaks and fold all but 1/2 cup into the butter mixture. Pour into prepared pan - bake for 40-50 minutes at 375. Let cool for 15-20 mins before turning out.
Melt 3 oz. white or dark chocolate and pour over cooled cake and refrigerate for at least two hours. Cut with hot knife Serve with fresh cream and maybe rose petals.

1 Tbsp lemon zest grated from 1 large lemon
1/4 cup sliced almonds

✅ CHOCOLATE ALMOND CAKE INGREDIENTS
CAKE
6 eggs large, room temperature, separated
¾ cup sugar divided
⅛ teaspoon salt
1 teaspoon lemon juice
7 ounces semisweet chocolate best quality, chopped
6 ounces unsalted butter room temperature, plus more for pan
⅛ teaspoon almond extract
2 cups almond flour 7 ounces
½ teaspoon baking soda
4 tablespoons seedless raspberry jam optional
1 tablespoon water
GANACHE ICING
¾ cup heavy cream
8 ounces semisweet chocolate best quality, finely chopped
1 teaspoon instant coffee powder
1 tablespoon honey
OPTIONAL
Cocoa powder for dusting cake pan
Chopped Almonds decoration
Fresh Raspberries decoration
Extra Baking Chocolate (White and Dark) for chocolate curls

1:07 Whip the egg whites with sugar until stiff peaks form. I love my KitchenAid stand mixer for this.
2:00 Melt chocolate with butter.
2:30 Whip egg yolks until thick, pale and stable. Stir in the melted chocolate-butter mixture.
3:06 Add almond flour in 3 batches, adding just enough whipped egg whites to soften batter.
3:50 Carefully fold in remaining egg whites into the batter.
4:50 Transfer batter to springform pan and bake.
5:25 Make jam syrup and chocolate ganache.
6:23 Level off the cake on the top using a sharp long knife. Invert it and place on a cake plate. A nice cake lifter comes in handy for this.
7:19 Spread jam syrup and followed by ganache icing. An offset spatula is useful for this.
8:32 Decorate with chopped almonds, fresh raspberries and chocolate curls.

I’m in the kitchen this week with my Dad baking up my favorite chocolate almond torte recipe. My dad makes this decadent and rich chocolate torte for me each year for my birthday. It’s something I look forward to every year and it never disappoints. Watch to find out another reason this relatively easy and wonderfully delicious chocolate almond torte recipe is so special to me. Chocolate Almond Torte
Ingredients:
For the cake:
4 1-ounce squares of unsweetened chocolate melted with 2 tablespoons coffee
½ cup butter
⅔ cup sugar plus 1 tbsp (divided)
3 egg yolks
3 egg whites
½ tsp salt
⅓ cup pulverized almonds
1 tsp almond extract
¾ cup flour
For the glaze:
1 1-ounce square of semisweet chocolate
1 tbsp coffee
3 tbsp butter
Directions:
Preheat oven to 350° F. If starting with whole almonds, grind to a fine texture in a food processor. Cream butter and ⅔ cup sugar until they form a pale yellow, fluffy mixture. Separate eggs. Beat egg yolks into butter and sugar mixture until well blended. In a separate bowl whisk egg whites until soft peaks form. Add 1 tablespoon sugar. Melt chocolate in microwave and combine with coffee. Use a spatula to blend melted chocolate into butter, sugar, and egg yolk mixture. Stir in almonds and almond extract. Immediately stir in ¼ of egg whites. Alternate folding in remaining egg whites and flour. Coat an 8-inch round pan with baking spray. Press batter into pan. Bake at 350° F for 20-25 minutes. Cake should not be over baked. A toothpick should come clean from the circumference, but the center should move slightly if shaken. Remove from oven and allow to cool for 10 minutes.
While cake is cooling make the glaze by melting semisweet chocolate, coffee, and butter over medium heat until smooth and silky. Remove cake from pan. Pour glaze over cake and spread with a flat spatula. Serve with a dollop of whipping cream and fresh berries.
