prunes, stoned, soaked and drained

rice flour, or cornflour
Directions:
No Christmas feast in medieval times was complete without a 'grete pye'. In some recipes, it could contain many varied meats, but quite
often only two or three different kinds were suggested; change the meats suggested here if you wish.
Use just over half the pastry to line a 23-cm/9-inch pie plate. Brush the inside with some of the egg white. Skin the pieces of breast and other meat if necessary and parboil them gently in salted water for 10-15 minutes. Drain and leave to cool.
Mix together in a bowl the minced beef, suet, salt and pepper to taste, the egg yolks and half the spice mixture. Add the rest of the spices to the dried fruit in another bowl.
Slice the parboiled meat. Pre-heat the oven to 220C/425F/Gas Mark 7. Add 1 or 2 tablespoons of the beef stock to the rice flour or cornflour in a small saucepan and cream them together; then add the remaining stock and stir over gentle heat until slightly thickened. Keep aside.
Cover the bottom of the pastry case with half the mince mixture. Arrange the sliced meat in a flat layer on top. Scatter the chopped spiced
fruit over it and cover with the remaining mince. Pour the thickened stock over the lot.
Roll out the remaining pastry into a round to make a lid for the pie. Brush the rim of the case with a little more egg white and cover with the lid. Press the edges to seal, and make escape slits for steam. Decorate with the pastry trimmings and glaze with egg white.
Bake for 15 minutes, then reduce the heat to 160C/325F/Gas Mark 3 and bake for 45-50 minutes longer.
Serves 6 to 8.

Then take mary, harde yolkes of egges, Dates cutte in ij peces,
reisons of coraunce, prunes, hole clowes, hole maces, Canell and
saffron. But first, whan thoug hast cowched all thi foule, ley the
remenaunt of thyne other stuffur of beef a-bought hem, as thou
thenkest goode; and then strawe on hem this: dates, mary, and
reysons, &c. And then close thi Coffyn with a lydde of the same
paast, And putte hit in the oven, And late hit bake ynough; but be
ware, or thou close hit, that there come no saffron nygh the brinkes
there-of, for then hit wol neuer close.

Charles Scribner's Sons, NY NY) which in turn was taken from one of the
following manuscripts: Harleian MSS 279 (about 1430 A.D.) or 4010 (about
1450 A.D.), in the British Museum, or Ashmole MS 1429, Laud MS 553 or Douce
MS 55 (about 1450 A.D.), in the Bodleian Library.

Ingredients
For the sweetcrust pastry:
320g plain flour
80g fine semolina a little salt
180g cold butter cut into cubed
100g icing sugar
2 egg yolks & 1 egg white
For the filling:
1 jar of homemade or shop bought fruit mincemeat

A little marzipan
Eggwash; one egg mixed with a splash of milk
Method:
For the Pastry:
1) In a mixing bowl, add 320g plain flour, 80g fine semolina and 180g cold butter cut into cubes
2) Using a hand mixer with a whisk attachment, mix until it becomes as smooth as sand. This could take up to 10 mins.
3) Sieve in the 100g icing sugar and mix until it is well blended
4) Add 2 egg yolks & 1 egg white and mix well with a fork
5) Gather the mixture together with your hands to form one piece
6) Wrap in cling film and pop into the fridge to rest until needed
7) Roll the pastry to just under half a centimetre thick and cut crimped circles a little larger than the indents in a shallow 12 hole pie tray.
8) Cut stars out of the rest of the pastry, some just large enough to touch the edges of the tarts and some a little smaller. Set aside
9) Egg wash and bake until still pale but just cooked
To make the Pies:
Preheat oven to Gas 5/ 190'C or 375'F
1) Roll out the marzipan and cut some stars a little larger and some a little smaller than the pie size
2) Cool and add a tsp of mincemeat to each one
3) Top with a large star then a small star; alternate pastry & marzipan so that some have the pastry on top and others, the marzipan
4) Bake for 10 mins or until the pastry is golden

Ingredients:
For the meat mixture:
2 pounds (1kg) ground lamb
1 large onion, chopped
3 garlic cloves, crushed
3 tbsp olive oil
4 tbsp (30) flour
1/2 tsp salt
1/2 black pepper
1 tsp rosemary
1 tsp thyme
1 tbsp tomato paste
2 cups beef broth
7oz (200g) carrots
7oz (200g) peas (fresh or frozen)
For the puree:
3.5 pounds (1.5kg) potatoes
1 tbsp butter
1/2 cup (120ml) milk
1/4 cup (25g) cheddar cheese
1/2 tsp salt
1/2 black pepper

Directions:
1. Peel the potatoes and cut into 4. Place in a medium pot and cover with cold water. Set over high heat, add a teaspoon of salt, cover and bring to a boil. cook until tender.
2. While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the onion and sauté 2-3 minutes, add crushed garlic and chopped carrots, sauté until the carrots are tender, about 5-7 minutes.
3. Add the ground lamb, Cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme. Add tomato paste, flour and stir.
4. Add beef broth and frozen peas. Bring to a simmer, reduce heat to low and cook, stirring occasionally, until sauce thickens.
5. When the potatoes are done cooking transfer them to a bowl. Add butter, milk, egg yolk, salt and pepper. mash the potatoes until smooth.
6. Preheat oven to 400F (200C).
7. Layer the meat mixture in a 13X8.5 (33X22cm) ovenproof dish. Spread the puree over the meat mixture.
8. Bake 20-25 minutes. or until mashed potato is golden brown.
