Recipe by: Magic Baking Powder Cream butter with 1/3 cup sugar. Beat egg whites stiffly and add 1/2 cup sugar. Put aside. Beat egg yolks with remaining sugar and add to first mixture, heating well. Mix in lightly the egg whites. Flavor with vanilla. Pour in cake pans, well grease, and cook from 25 to 30 minutes in oven 375 F. Spread marshmallow between layers and cover cake with Foaming Icing. This better than bakery sponge cake recipe is light, airy, and just straight up DELICIOUS! It’s so versatile that you can pair it with literally anything. I love filling mine like a classic Victorian sponge cake with my homemade raspberry filling recipe and whipped cream – YUM!
HOW TO WHIP EGGS:
INGREDIENTS:
Sponge Cake
- ⅓ cup (40 g) flour - regular, all purpose (see note 1 on blog post)
- ½ cup (60 g) cornstarch
- ¼ tsp baking powder
- ¼ tsp salt
- 4 large eggs - whites and yolks separated
- ⅛ tsp white vinegar
- ⅔ cup (132 g) white granulated sugar - separated in half (1/3 for the egg whites & 1/3 for the egg yolk mixture)
- 1½ tbsp warm water - not boiling
- 2 tsp vanilla essence/extract
- 2 tbsp (30 g) unflavoured vegetable oil - I use canola
IMPORTANT: Cake tins must be ungreased (with only the bottom lined), and ensure the cakes are cooled upside down once baked. Bake at 160 °C (320°F) with the fan on for 25 minutes. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).
Simple Syrup (I use about 3/4s of the quantity below to brush the cake)
- ½ cup (100 g) white granulated sugar
- ½ cup (110 g) boiling water
Whipping Cream
- 2 cups (375 g) cold whipping cream
- 2 tsp icing sugar - also known as confectioners sugar/powdered sugar
- ½ tsp vanilla essence/extract
- 1 punnet fresh strawberries for decorating - sliced in half

And add citric ingredients like a little bit of lemon juice or orange juice. Or lemon zest.

The texture is dense and silky. Put it in your mouth softly ... This is a melting cake. I've found a more successful recipe by modifying it in the past on my blog. Enjoy ^^
15cm in diameter x 7cm deep Cheesecake pan
(150g)4 egg whites
(80g) 4 egg yolks
(90g) 1/3 cup of Sugar
(70g) 1/2cup + 3Table spoons of Cake Flour
(48g) 1/4 cup of Veggie oil
(85g) 1/3 cup of Orange juice
(1g) 1/2 teaspoons of salt
Bake for 150°C 30 minutes after preheating.
Remove steam and place kitchen cloth between the oven door and reduce temperature to 130*c and bake 30 minutes.

이 케이크는 아래위 열선이 있는 오븐으로 구울때 가장 잘 만들어집니다. 컨벡션에서는 많이 부풀고 푹 꺼지는 등 좀 까다롭습니다.
아래에 열선이 없는 오븐도 잘 안되요. 이런 케이크와 비슷한 머랭이 들어간 케이크, 코튼스폰지나 수플레치즈케이크 등은 컨벡션에서 굽기에 어려움이 있습니다. 거의 잘 안나온다고 보시면 됩니다,
하지만 앞으로 제가 더 테스트 해볼게요. 방법이 없지는 않겠죠?
그리고 일반 케이크 팬(검은색) 에 구워도 되지만 열전도율 때문에 알루미늄 팬이 좋습니다. 그 팬이 더 결과가 좋습니다. 쉬폰 처럼요.
그리고 이 케이크는 오렌지 쥬스와 약간의 알콜이 생명입니다. 그게 있어야 계란 냄새를 좀 줄여줍니다. 이 케이크에는 계란이 많이 들어갔거든요.

90g sugar
3 egg yolks
25g milk
90g flour
25g vegetable oil

170℃ for 30 minutes
➢Method
Separate the egg whites and yolks. It's OK if the eggs are cold.
Make a hard meringue with the egg whites and sugar.
Add the egg yolk and mix with a whipper.
Add milk and mix with a rubber spatula.
Sift the flour and mix 30 times.
Add vegetable oil and vanilla and mix 30 times.
Put the dough in the mold and flatten it.
Bake in a preheated oven at 170°C for 30 minutes.
Remove the mold immediately and let the sponge cake cool.

INGREDIENTS:
Basic plain vanilla cake
2 eggs
Vanilla 1 tsp
Beat for 1 mins
Sugar 2/3 cup
Add gradually
Beat until foamy consistency
Oil 1/2 cup
Beat for 1 mins
All purpose flour 1 cup
Baking powder 1 tsp
Add gradually
Milk 1/4 cup
7 inch pan
Brush oil
Place baking paper
Place a stand & heat the pan for 5 mins on medium flame
After 5 mins place the mould
Cook it on low flame for 30-40 mins or bake in a preheated oven at 160c for 30-40 mins
NOTE: 1 CUP = 250 ML
