How To make ==Coriander Sausage Filling==
2 lbs coarsely ground Pork Shoulder
2 Tbs whole Coriander seeds
1 Tbs ground Coriander
1 Cup chopped fresh Cilantro
1 Tsp coarsely ground black pepper
1/2 tsp crushed red pepper
2 tsp salt
7 foot long natural casing
2 yards butchers twine
In a large mixing bowl, using your hand or a fork, combine all the ingredients for the filling. Prepare casing, fill, link and cook. Casing Prep::: 1. Place the casings in a bowl of warm water in your kitchen sink. It will relax nearly instantly. Meanwhile set up the sausage grinder with the stuffing nozzle. 2. Take casings out of water and fit the open end over the faucet. Turn on warm water gently to allow the water to run through the casing. Then remove casing and slide immediately over the sausage noxxel. 3. Place th filling in the top of the grinder and crank the machine so that the filling feeds into the casing. Continue cranking until entire casing is filled. 4. Using butchers twine, tie a knot every 4 inches along the length of the sausage. Cook as you like!

Now, you can get an expensive meat grinder that you’ll end up using twice every 3 years, or you can just get the sausage attachment for that sexy Kitchen Aid you HAD to have as a wedding gift that was probably only plugged in one time since you took it out of the box.
Meat Jesse’s Pro Tips:
● Equipment must be kept cold at all times
● Always use natural casings
● Meat must be kept cold and cut into small chunks that will not clog your grinder
● Use cold beer as a meat lubricant when stuffing the machine
● When making pork sausage, use pork butt because pork butt is the best butt
● Don’t over-stuff your sausage
Meat Jesse’s German Grandma’s Thuringer Recipe:
8 lbs (trimmed down to 6lbs) pork butt cubed into 1 ½” pieces
1 TBSP Coriander
1 TBSP Fennel
1 TBSP Marjoram
1 TBSP Thyme
1 TBSP Rosemary
Salt, as needed, no less than 1 ½ TBSP

Delicious Sausage curry, perfect combination with Rice/Bread/Chappathi
Ingredients:
10 pieces Sausage
4 medium Onions
4 Garlic
3 Green Chillies
2 Dried red chillies
some Curry leaves
some Coriander leaves
2 medium Tomatoes
2 1/4 tsp Kashmiri chilli powder
1/2 tsp Turmeric powder
1 tsp Coriander powder
3/4 tsp Garam masala
1/4 tsp Mustard seeds

Lentils are a legume that is indigenous to the Mediterranean and Middle Eastern Countries. They are seeds of a plant that are jam packed with fiber, potassium and protein and make for a great meat replacement.
Since lentils are starchy, earthy in flavor, and can be on the bland side, there are many ways to make them flavorful including by adding them into soup. When other ingredients are introduced that compliment lentils like onions, garlic, spices, and lemon, the taste is out of this world.
There are many variations of lentil soup depending on where you live so do not be surprised if you see different ingredients in it. My version is much more of a Middle Eastern Lebanese style.

• 2 tablespoons olive oil, ghee, or clarified butter
• 2 peeled and medium diced yellow onions
• 2 peeled and medium diced carrots
• 2 peeled and medium diced ribs of celery
• 3 finely minced cloves of garlic
• 1 ½ teaspoons ground cumin
• 1 teaspoon ground coriander
• 3 cups green lentils, rinsed
• 1 large peeled and medium diced potato
• 2 bay leaves
• 9 cups chicken stock
• juice of 1 lemon
• salt and pepper to taste
