Mint Pesto Pasta Recipe:
For The Mint Coriander Pesto:
Mint - 1 Cup
Coriander Leaves - 1 Cup
Peanuts - 2 tbsp
Green Chilli - 1 no
Garlic - 2 nos
Salt - ¼ tsp
Chaat Masala - ¼ tsp
Lemon Juice - ½ tsp
Olive Oil - ¼ Cup
Processed Cheese (grated) - 1 tbsp
For Making The Pasta:
Macaroni Pasta - 1 Cup
Garlic (sliced) - 4 nos
Onion (thinly sliced) - 1 no
Mushroom (thinly sliced) - ½ Cup
Tomato (thinly sliced) - 1 no
Processed Cheese (grated) - For Garnish
Salt - ½ tsp
Black Pepper Powder - ½ tsp
Oil - 2 tbsp + 1 tbsp
Cooking Instructions:
1. Combine the ingredients for the mint coriander pesto in a mixer blender, without the cheese. Pulse blend until coarse. Add the cheese and mix well. Set aside.
2. Boil water in a pot with salt and 1 tbsp oil. Add the pasta and cook, until tender about 10 minutes. Drain, coat in oil and set aside. Retain a cup of the pasta water.
3. In a pan, heat oil over medium, add the sliced garlic and brown them, about 2 minutes.
4. Add the sliced onions and mushroom, saute until tender.
5. Add the pesto paste as required and pasta water, add the pasta and toss well to coat.
6. Add tomatoes and toss.
7. Transfer to a bowl and garnish with grated cheese.
Cooking Tips:
1. Do not over boil the pasta, it will disfigure while tossing.

Pesto Pasta | How to boil Pasta | पेस्तो पास्ता | Chef Sanjyot Keer
Full written recipe for Pesto Pasta
Prep time: 10-15 minutes
Cooking time: 15 minutes
Serves: 3-4 people
Ingredients:
Pesto
OLIVE OIL | ऑलिव ऑयल 2-3 TBSP
GARLIC | लेहसुन 1 CLOVE
WALNUT | अखरोट 4-5 NOS.
SALT | नमक A PINCH
BASIL LEAVES | बेसिल के पत्ते 100 GRAMS
PARMESAN CHEESE | पारमेसान चीज़ 50 GRAMS (GRATED)
OLIVE OIL | ऑलिव ऑयल 3 TBSP
Boiling pasta
SALT | नमक A LARGE PINCH
PASTA | पास्ता 250 GRAMS (PENNE)
Final Assembly
PASTA | पास्ता AS REQUIRED (HOT)
PARMESAN CHEESE | पारमेसान चीज़ AS REQUIRED
PESTO | पेस्तो AS REQUIRED
PASTA WATER | पास्ता वाला पानी 1-2 TBSP
SALT | नमक IF REQUIRED
Method:
To make pesto add olive oil in a chopper along with garlic, walnut & a pinch of salt & grind it together to emulsify the oil nicely.
Further add the basil leaves, parmesan cheese & olive oil, grind it again until a semi-coarse paste is formed, make sure you scrape the sides of the chopper.
Your pesto is ready.
To perfectly boil the pasta bring water to a roaring boil in a stock pot, then add salt & pasta of your choice & let the pasta for boil 8 minutes.
Once boiled strain the pasta using a large spider, make sure you reserve the pasta water.
In a bowl add boiled pasta as required, parmesan cheese & pesto as per your taste preference & mix well.
Further add a couple of tablespoons of the pasta water to bring the pasta to the right consistency, make sure that the pasta water is hot.
Once mixed taste & adjust the seasoning if required.
Your quick & easy pesto pasta is ready.

How to make CILANTRO PESTO PASTA and PESTO OUT OF ANY HERB!!
Here's one of my go-to's: CILANTRO PESTO PASTA. This recipe is on my rotation pretty frequently, believe it or not. I take tender stems of cilantro or leftover herbs and blend it together with lots of fresh garlic, lemon juice, extra-virgin olive oil, dried chili pepper flakes and seasoned with salt and pepper! It's incredibly simple and I honestly follow this recipe whenever I have leftover herbs that are about to go bad in my fridge. Try it with watercress, basil, spinach, arugula and other leafy herbs or greens, add a bit of protein and you're good to go! Enjoy!

Hey guys ! My today’s recipe is Pesto Pasta ! Pesto is a very popular Italian sauce, which is made with fresh basil leaves, toasted pine nuts, parmesan cheese, garlic, and olive oil.
As basil leaves are not easily available every part of India, I’m swapping them with mint and coriander leaves and replacing pine nuts with cashews ( you can also use toasted walnuts or almonds instead ). And adding some toasted sesame seeds as well, which elevate the taste and help in making the sauce more flavourful !
Here is the recipe ????
INGREDIENTS FOR PESTO SAUCE
*2 cups coriander leaves/ हरा धनिया
*1 cup mint leaves/ पुदीना
*1/4 cup toasted cashews/ काजू
*2 tbsp extra virgin olive oil/ ऑलिव ओईल
*1/3 cup grated parmesan cheese/चीज़
*2 tsp Lemon juice/ नींबू का रस
*3 cloves garlic/ लहसुन
*2 tbsp toasted sesame seeds/ तिल
*Salt and pepper as required/ नमक और काली मिर्च स्वादानुसार
INGREDIENTS FOR PASTA
*2 tsp olive oil/ ऑलिव ओईल
*1 medium sized chopped capsicum/ green pepper/ शिमला मिर्च
*1/3 cup green peas/ मटर
*250-300 gm pasta/ पास्ता
INSTRUCTIONS
1 = In a medium heated pot, add 4-5 cups of water and bring it to boil. Add 250-300 gm of your choice of pasta along with some salt and let it cook for about 8-10 minutes or as per your pasta pkt instructions.
2 = Prepare the pesto sauce by adding all the pesto ingredients into a food processor or blender. Make sure not to over blend as the sauce should be a little bit coarse.
3 = In a wok, heat 2 tsp oil. Add capsicum and sauté for about 2 minutes. Now add peas and keep sautéing for 2 more minutes. Turn off the heat. Add in cooked pasta along with pesto sauce. Give it a good mix and serve !
