How To make "Shepherdless" Pie
4 oz split red lentils
2 oz pot barley (or pearl barley)
8 oz carrots; grated
1 md onion; finely chopped
1 cn (14oz) tomatoes, chopped
1/2 pt vegetable stock
1 1/2 lb potatoes
6 tb milk
3 oz Cheddar cheese; grated
Put the lentils, barley, carrots, onion, tomatoes and their juice and stock into a saucepan. Bring them to the boil, cover the pan, and simmer for 40 minutes or until the lentils and barley are soft. Boil the potatoes in their skins. Peel them as soon as they are cool enough to handle and mash them with the milk and the cheese. Preheat the oven to Gas Mark 6 or 200~C/400~F. Put the lentil mixture into a 900ml (1 1/2 pint) pie dish. Pile the potatoes on top in an even layer. Make patterns on them with a fork. Put the pie into the oven for 20 minutes or until the ridges on top begin to brown. How to make Low-Carb Shepherdless Pie
Today I'm making Shepherdless Pie. This vegetarian (and even vegan, if you omit or substitute the milk and butter) dish is super low in carbs thanks to the mashed cauliflower topping in place of traditional potato. It's about 220 calories a serving which makes for a healthy, filling, hearty meal, perfect for a week-night!

Covid 19 Batch Cooking. Shepherdless Pie
Make your food go further by batch cooking simple meals and freezing ????

Time to make some tasty meals seen as I don't have anything else to do! Take your time or just throw it all in the pan.
It may be that all we can get due to everyone stock piling is fresh veg so get freezing and get organized effortlessly.
I'm a chuck it in and go kind of cook and never make it the same way twice! If you have tinned beans add them, not much can go wrong with these dishes...don't worry about sticking to what I've done, use what you have.
Shepherdless Pie:
My version.
Ingredients.
Any onion...I used Leek
Any veg...I used small butternut squash, 2 celery stalks, 1 broccoli head, 2 peppers red & yellow, garlic, 2 courgettes. Use whatever you have and chop small.
2 veg stock cubes, I used bullion.
450ml of water
Fry or cook down around 15 mins, high heat keep stirring.
Tip off any extra juice and pop into a oven dish or 2.
Add salt and pepper, parsley or any herb you would like, fresh or jar. I also added a splash or 2 of soy sauce because I saw it and though Yeah!
Chop 2 to 3 sweet potatoes, steam or boil then mash when soft enough. Add salt and pepper.
Top your shepherdless Pie with a bit of cheese if you like.
Top tip:
Salt then taste and add gradually if your not sure, salt is the disaster or success of every dish.
Get the seasoning correct and you can't fail. ????
