INGREDIENTS:
1 and 1/2 cups of adzuki beans, overnight soaked
3 tbsp of cooking oil
1 large onion, sliced
1 inch ginger, sliced
3 cloves of garlic, sliced
1 large tomato, cut into wedges
1 tsp of ground coriander
1/2 tsp of ground cumin
1 tsp of ground red chilli
3/4 tsp of ground turmeric
1/2 tsp of crushed black pepper
salt to taste
3 green chillies
some chopped coriander leaves

Green Moong Curry recipe
Ingredients:
Green Gram/mung beans/whole moong - 1 cup
Oil - 1 tbsp
Mustard seeds - 1 tsp
Urad dal - 1tsp
Dry red chilli - 2 broken
Green chilli - 2 slit
Curry leaves - 10-12
Ginger - 1tsp chopped
Turmeric powder - 1/2 tsp
Chilli powder - 3/4 tsp(optional)
Water - 2 to 2.5 cup or as required
Coriander leaves - few chopped

INGREDIENTS

1 bay leaf
1 tsp of cumin seeds
1 medium size onion, sliced
3/4 tbsp of ginger garlic paste
2 medium size to tomatoes, chopped
1/2 tspof ground turmeric
1 tsp of ground coriander
1/2 tsp ground cumin
1/2 tsp of ground red chilli
3 green chillies
salt to taste
some chopped coriander leaves
NOTE - Adjust the spices according to your taste.

These crunchy sprouted beans or lentils were then used in cooking curries, dals, stir fry dishes, and also added raw to salads in addition to us snacking on by the handfuls. Moth Dal Sprouts are a culinary vegetable grown by sprouting moth beans. All you need are some moth beans/moth lentils, a colander or a mixing bowl, a lid and some water. Also known as moth lentils or matki, moth beans are small brown beans with a yellow interior. They have a strong, earthy aroma and a rich nutty flavor when cooked.
