How To make Turkey Nachos
16 ounce can refried beans
1 teaspoon chili powder
1 teaspoon ground cumin
2 tablespoons vegetable oil
1 pound turkey breast, cooked
chopped
1/2 cup onion :
diced
4 ounces green chili pepper diced
2 tablespoons fresh cilantro :
chopped
1 teaspoon salt
1/2 teaspoon pepper
1 cup tomatoes -- finely chopped
10 1/2 ounce bag nacho chips
2 cups shredded monterey jack cheese
Combine beans, chili powder and cumin, heating through.
Heat oil in a skillet. Add turkey, onion, chilies, cilantro, salt and pepper. Cook, stirring occassionally, until onion is tender. Remove from heat and stir in tomato.
Preheat oven to 425. Spread about 1 teaspoon of bean mixture over each chip . Place in a single layer ona greased baking sheet. Spoon about 1 tablesppon of turkey mixture on top of each chip.
Sprinkle cheese evenly over turkey. Bake 5 minutes, or till cheese is melted . Serve immediately

How To Make Two Layered Nachos With Ground Turkey and Real Cheese
Why make one layer of nachos when you can make two layers? In this video, I will share how to make delicious two layered nachos using ground turkey and real cheese.
Ingredients:
1 pound ground turkey
cooking spray or 2 TBS of oil
seasoning salt (to taste)
granulated garlic (to taste)
1 large bag of tortilla chips (about 16 oz)
1 cups shredded medium Cheddar cheese
1 cup Monterey Jack cheese
1/2 cup black beans
3/4 cup salsa (medium or hot)
1/4 cup nacho sliced pickled jalapenos
1/4 cup sour cream
1/4 cup guacamole
1/4 cup sliced green onions
non stick pan
wooden or plastic spoon or spatula
colander or strainer
large oven-proof plate or tray
Directions:
heat nachos on middle rack of the oven
pre-heat oven to 450 degrees
-hear oil or cooking spray in pan
-place ground turkey into heated pan
-sprinkle seasonings on meat
-continue to mix and break up meat while it cooks
-once the meat is cooked, strain the meat in sink or bowl
-spread one or two handfuls of chips on an oven-proof plate or tray
-spread 1/2 cup of meat, 1/2 cup of each of the cheeses, 2 or more TBS of beans, and 3 or more TBS of salsa on the first layer of chips
-spread second layer of chips on top of first
-spread 1/2 cup of meat, the remaining cheeses, 2 or more TBS of beans, 3 or more TBS of salsa and pickled jalapenos on top
-carefully place plate or tray into the oven on the middle rack
-heat nachos for 5 to 7 minutes or until cheeses are melted (watch them!)
-carefully take the nachos out of the oven and place on heat-proof surface
-stir the sour cream and top the nachos with 1/4 cup
-stir the guacamole and spoon 1/4 cup next to the sour cream
-sprinkle green onions over the entire dish
Serves 2 hungry adults

3 Large Avocados
1/2 Lime (juiced)
1/2 Red Onion (diced)
1/4 cup Cilantro
1 Jalapeno (diced)
Adobo - Salt, pepper, garlic, onion powder (to taste)
Queso w/ Rotel -
8 oz Monterey Jack
8 oz Queso Melt (or queso blanco)
2 tbsp butter
1 tbsp flour
1 cup of whole milk (use 1/2 and then the other 1/2 to thin the sauce)
1 can Fire Roasted Rotel
salt, pepper, cayenne pepper
Ground Beef -
1 lb 80/20 Ground Beef (use whatever protein you prefer)
salt/pepper/garlic/onion powder
ancho chile powder
chili powder
cumin
Nachos:
1-2 packs of corn or flour tortillas (quartered)
shredded cheese
oil for frying
sour cream
(Add whatever toppings you prefer!!)
Directions:
Make your Guac in advance and keep it cool in the fridge until you're ready to plate. Taste as you go and adjust the seasoning as needed. Fry your tortillas at 350 degrees for about 90 seconds or until they are golden brown and crispy. Making your own tortilla chips at home is totally worth it because they hold up so much better to all of these toppings and they are delicious! You can keep the tortilla chips warm in the oven at 200 degrees while you prep everything else (make sure to salt the chips as soon as they get out of the oil)
Cook your ground beef over medium high heat and season to taste. Use a slotted spoon when adding to your nachos to avoid excess oil.
Make your queso by starting with a roux. (Butter and flour). Add cold milk to the roux and increase the temperature to medium high - mixing constantly. (I recommend starting with half of the milk at first and then using the other half to thin the cheese sauce to your preferred consistency toward the end). Reduce the heat to low and slowly incorporate your cheese - mixing until everything is smooth and melted nicely. Add the remainder of the milk as needed and then season to taste. Add your Rotel if desired.
Finally, plate your nachos with all of your favorite toppings! Enjoy!
