Tomatoes, finely chopped Canned mild or green Chilies Canned hot jalapeno chilies Onion, finely chopped Diced red bell pepper, fresh Or roasted x Whatever else seems good to You (my husband opted for Olives) Fill a big bowl with BAKED TOSTITOS. Provide everyone with a butter knife to spread the beans onto the chips, and add toppings as desired. If you feel Nachos must have cheese, then you have to spread beans on each chip, arrange them on a cookie sheet and sprinkle the other ingredients, including shredded FF cheese, over them. Bake at 350 just till cheese is melted. But try it the other way first. Very tasty, everyone gets the toppings they prefer, and the chips stay CRISP! From: . Simple Black Bean Nachos Vegetarian Recipe
A piping hot plate of nachos is always a popular crowd pleaser. This simple black bean vegetarian version is so gorgeous that we are sure even the meat lovers will love it too.

Here's the recipe and cooking instructions:
Prep time: 10 minutes Cooking time: 15 minutes Serves: 4
Recipe ingredients
- 1 bag Proper salted tortilla chips
- 1 can of Chantal Organics black beans
- 1 Can of Chantal Organics chopped tomatoes
- 3 tsp Mrs Rogers Cajun seasoning
- A handful Mainland Grated tasty cheese
We made our black bean chilli in a Le Creuset Signature Cast Iron Low Round Casserole
Cooking instructions
1. Preheat the grill to 200°C.
2. Drain and rinse black beans and place in a small saucepan over a medium heat along with tomatoes and Cajun seasoning. Simmer until heated through.
3. Spread corn chips evenly onto a baking tray and top liberally with tasty cheese. Place the baking tray under the grill until the cheese is melted and starting to brown.
4. Pour bean mixture on top of the cheesy nachos and devour!
Serving suggestion
Divide nachos onto 4 plates and top with Anchor sour cream, Superb Herb coriander and a few jalapenos for the spice-lovers.
