Paula's Macho Nachos Recipes - What's Cooking Wednesday
If you are getting ready for the Super Bowl or any kind of great party, nachos are always a huge hit with families. Paula's macho nachos ( are always something people dive into at every party.
Ingredients
1 can refried beans
1 large bag white corn tortilla chips
1 medium onion, chopped
1 can chili, or homemade
1 cup pepper Jack cheese, shredded
1 cup cheddar cheese, shredded
1 cup sour cream
1 cup green onion, chopped
1 tomato, diced
1 jalapeño, sliced
Preparation
Have all ingredients prepared and ready to assemble nachos.
Step 1
Pre-heat oven to 350°F.
Step 2
In a small saucepan on low, heat refried beans until they are loose enough to spoon onto nachos. On a large oven proof platter, spread out tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with onions, Jack cheese, and jalapeno slices. Spoon on chili and top that with Cheddar cheese. Repeat this layering process until ingredients are used up. Place chips in the oven at 350°F until cheese has melted. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeno slices and serve hot.

If you're the kind of guy who regularly puts your fist through drywall at the mildest of annoyances, you're gonna love these nachos.
NOT FOR GIRLS.
Nacho chips
Shredded cheddar
Tomato/blackbeans/green onion/whatever else you want just lots of stuff.
(the most important thing is to layer)
Repeat that process.
Probably add some hot sauce or other spice if your salsa isn't spicy
The other most important thing is to bake them in an oven.
If you don't bake your nachos then just throw them on the lawn, and then ridicule yourself.
If you put your nachos in the microwave, we need to talk.
Loaded BBQ Chicken Nachos

Serves 4
Ingredients:
1 tablespoon canola oil
2 chicken breasts, finely diced
½ tablespoon Kosher salt
½ tablespoon freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon chili powder
¾ cup barbecue sauce
1 13-ounce bag of tortilla chips
2 cups shredded cheese blend
½ red onion, finely sliced
1 tomato, diced
8 bacon strips, cooked and crumbled
2 tablespoons parsley, finely chopped
1/2 cup sour cream
1 avocado, diced
Preparation
Preheat oven to 350°F.
Heat the oil in a pan over high heat. Cook the chicken with salt, pepper, garlic powder, and chili powder for two to three minutes. Add the bbq sauce and cook until the sauce has reduced by about half, about five minutes. Remove from heat.
In a large skillet, spread out two large handfuls of tortilla chips. Layer with half of the bbq chicken, followed by half of the cheese, onion, tomato, bacon, and parsley. Repeat with the remaining ingredients. Bake for 15 minutes.

Bake on 350 / 12 to 14 minutes. / Put tortillas on a baking sheet.
Start building layers of food. Chili, then cheese, then tomatoes, then peppers. EASY BAKE 350 / 12 to 14 minutes. Keep watching and don't let the tips of the tortillas burn.
