How To make Tropical Muffins
2 c All-purpose flour
1 1/2 ts Baking powder
1/2 ts Baking soda
3/4 ts Salt
1/2 c Sugar
1/2 c Shredded coconut
2 Eggs
1 c Sourdough starter
1/2 c Vegetable oil
1 c Mashed ripe bananas
1/3 c Orange juice
1 t Grated orange peel
Lightly grease 18 muffin cups or line with paper liners; set aside. Preheat oven to 375F. In a large bowl, stir together flour, baking powder, baking soda, salt and sugar. Stir in coconut. Make a well in center; set aside. In a medium bowl beat eggs. Stir in sourdough starter, oil, bananas, orange juice and orange peel. Pour into well in flour mixture. Stir with a fork until dry ingredients are just moistened. Fill prepared muffin cups 2/3 to 3/4 full with batter. Bake in preheated oven 25 to 30 minutes or until golden brown. Remove from muffin cups. Serve hot. Makes 16 to 18 muffins.

How to Make: Mini Tropical Muffins
Take a small bite into paradise!
These mini tropical muffins are perfect for a midday treat!
The whole family will enjoy the flavors of coconut, pineapple and mango!

MINI TROPICAL MUFFINS
36 Servings| 15 min Prep Time| 15 min Bake Time
INGREDIENTS
• 1 c all-purpose flour
• 1 c whole wheat flour
• 2 tsp baking powder
• 1/4 tsp salt
• 1/2 c coconut oil (melted)
• 1/2 c brown sugar
• 1/2 c milk (room temperature)
• 1 tsp coconut extract
• 2 eggs (room temperature)
• 1 banana mashed
DIRECTIONS
• Preheat oven to 350 degrees. Spray mini muffin tin with cooking spray.
• Set aside frozen fruit to thaw.
• In a small bowl sift together the flour, baking powder and salt.
• In a medium bowl beat the sugar and oil together with an electric mixer for 1-2 minutes. Mix in banana and beat. Add in eggs and beat until combined. Lastly, add in milk and mix.
• Slowly add in half of the flour mixture and mix together. Add in the other half and continue to mix until combined.
• Cut fruit into 1 inch pieces and fold into the batter. Scoop about 1 tablespoon worth of batter into each muffin tin. Add coconut flakes, pecans or preferred toppings. Bake for about 10-15 minutes.
• Let cool and remove muffins. Fill muffin tins with remaining batter and bake.
