2 CUPS WHOLE ALMONDS (ABOUT 10 OZ.)
11 OZ. MILK CHOCOLATE MORSELS
2 STICKS BUTTER
1 CUP SUGAR
3 TBSP. COLD WATER
Spread almonds on a pan and toast at 350 degrees F
for about 10 minutes, shaking after the first 5 minutes.
After 10 minutes, remove from the oven and let cool.
Put chocolate morsels in a food processor or hand pull
chopper and chop fine (but not into powder).
Chop cooled nuts as well. Sprinkle 1 cup nuts over the
bottom of a greased (with butter) 15 x 10 x 1 jelly roll
pan. Sprinkle 1 cup of chopped chocolate over nuts.
In a saucepan, combine butter, sugar, and water, then
cook over medium heat, stirring occasionally until
mixture reaches 290 degrees F (the soft crack stage).
Quickly pour mixture over nuts and
chocolate. Sprinkle remaining nuts and chocolate on
top. Chill then break into pieces and enjoy!
CAUTION: Candy is hot - use a spatula to spread and
do not touch until cooled.

Ingredients
1/2 cup coarsely chopped almonds*
1 cup (2 sticks ) unsalted butter cut into pieces (226g)
1 cup granulated sugar 200g
1/4 cup water 60ml
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup milk chocolate chips
1-2 Tablespoons finely chopped almonds for topping, optional
Flaky sea salt for topping, optional
Instructions
00:00 Introduction
00:22 Line a 9x9 pan with parchment paper and scatter coarsely chopped almonds evenly over the bottom. Set aside.
00:43 Combine butter, sugar, water, and salt in a medium-sized pot over medium heat. Meanwhile measure out your vanilla extract and have it ready nearby.
01:22 Stir ingredients frequently over medium heat. During this time (only before boiling), use a wet pastry brush to brush down the sides where any sugar may settle on the side of the pot to prevent sugar crystals. Continue to stir frequently until mixture comes to a boil (this may take a while, have patience and do not turn up the heat or you will ruin your toffee).
01:51 Once the mixture comes to a boil, attach your candy thermometer. Make sure that the point of the candy thermometer is not touching the bottom of your pan.
Continue to stir occasionally, the mixture will slowly thicken and will turn a more yellow hue as it cooks, and cook to hard crack (305°F/151°C).
02:38 Once toffee reaches 305°F/151°C, immediately remove from heat and stir in vanilla extract (careful, it bubbles and steams a bit).
02:56 Pour mixture evenly into your prepared pan over the almonds. Allow to sit for 5 minutes and then sprinkle chocolate chips evenly overtop the mixture. Cover with foil and allow to sit another 5 minutes, then remove the foil and use a spatula to gently spread chocolate chips evenly over your toffee.
Immediately sprinkle with additional finely chopped almonds and flaky sea salt, if desired.
03:30 Allow to cool completely at room temperature before breaking and serving.

2 sticks butter
3 Tablespoons water
1 cup sugar
3 Hershey bars
Place butter, water, and sugar in a heavy saucepan. Cook over medium heat until thick and a deep copper color; about the color of an old penny.
Pour onto a parchment paper lined, or well buttered, cookie sheet.
Break up Hershey bars and place on top of hot candy. Allow chocolate to melt. (I turn another cookie sheet upside down to cover the candy.) Spread the melted chocolate over the toffee.
Place in the refrigerator until candy cools and chocolate is hardened. Break into pieces.

INGREDIENTS & PROCESS:
½ CUP SUGAR
1 TBSP WATER
COOK UNTIL CARAMALIZED
2 TBSP WATER
½ CUP WHIPPING CREAM
MIX WELL
½ CUP SUGAR
2 TBSP HONEY
2 TBSP CORN SYRUP / GLUCOSE SYRUP (OPTIONAL)
MIX WELL
JUST A PINCH SALT
MIX WELL
COOK UNTIL SOFT BALL CONSISTENCY
2 TBSP BUTTER
½ TSP VANILLA
MIX UNTIL BUTTER MELT
POUR INTO A MOULD (PLACE A BAKING PAPER INSIDE)
KEEP 2 HOURS IN ROOM TEMP. FOR SET WELL
REMOVE FROM THE MOULD
CUT THE TOFFEE IN PIECES
WRAP IN BUTTER PAPER OR TOFFEE PAPER
