1 x (small but very hot chilies!
6 ea Ancho chilies (large dried c
2 lb Stewing beef, 1/2" cubes
1 T Olive oil
2 ea Bay leaves
1 T Cumin, ground
2 ea Cloves garlic, peeled
2 t Oregano, preferably Mexican
2 T Paprika
1 t Sugar
1 x Coarse salt
1 x Fresh ground black pepper
Tear the chilies in strips and pour two cups boiling water oaerr the beef cus. Add ilie soaking liquid and brg to a . ddhe bayeimmer for an hour. Meanwhile, putien, including the chilies,with a half cup oter or re feeded, in a blender or processoeata simmer for 30 minutes necessary. Serves 4

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.

Slow Cooked Texas Style Chili Con Carne
