Chilli Con Carne, Healthy, low calories and Gluten free.
Chilli Con Carne Gluten-free—amazingly delicious food to help you lose that COVID 19 lockdown weight.
The recipe has exciting flavours. It's incredibly easy to cook and is less than 500 calories per portion.
The recipe is taken from a recipe book produced by Slimming World called 50 Golden Greats. You have to be a member of Slimming World to buy this book, so there is a link to their website below
Cooking Instructions
• Add onion and 2 tbsp water to a large pan, cover and cook for 10 mins
• Uncover the pan, increase the heat and cook off any excess liquid
• Add the beef and cook for 3-4 mins, breaking up any lumps
• Add the paprika, chilli powder, 1 tsp ground black pepper and fry for 2 mins
• Stir in the tomato puree, chopped tomatoes and stock cubes in 100ml boiling water
• Stir in Worcestershire sauce, mushrooms and 1/2 tsp salt
• Simmer uncovered for at least 30 mins, stirring every now and then
• If you have time cook for 1 hour
• Stir in the beans and simmer for 5 mins
Recipe
• 1 large onion
• 500g lean beef mince
• 2 tbsp paprika
• 1-2 tbsp hot chilli powder
• 2 tbsp tomato puree
• 400g can chopped tomatoes
• 2 beef stock cubes
• 2 tbsp Worcestershire sauce
• 250g chestnut mushrooms
• 400g can red kidney beans
• fresh parsley to serve

So geht‘s:
In einem Topf Öl erhitzen und das gemischte Hack ordentlich anrösten lassen
Eine Zwiebel in feine Würfel schneiden. Chili ebenfalls schneiden. Knoblauch andrücken und hacken
Wenn das Hack angeröstet ist, Zwiebel, Chili und Knoblauch dazugeben und mit Salz und Pfeffer würzen
Alles ca. eine Minute zusammen anrösten, passierte Tomaten draufgießen und einkochen lassen
Mais und Kidneybohnen mit in den Topf geben. Kuvertüre raspeln und auch mit dazugeben

CHILI CON CARNE RECIPE
1 tablespoon avocado oil
1 medium yellow onion, chopped
1 green bell pepper, chopped
4-5 cloves of garlic, chopped
1/2 tsp kosher salt
1 tbsp chili powder
1 tsp dried oregano
1 tbsp tomato paste
1 chipotle chile en adobo, coarsely chopped, with 1 tablespoon sauce
1 pound grass-fed ground beef
1 (14 1/2-ounce) low sodium chicken broth
1 (14 1/2-ounce) can diced tomatoes
1 (15 1/2-ounce) can kidney beans, rinsed and drained
1 (15 1/2-ounce) pinto beans
DIRECTIONS:
Heat the olive oil in a large pot over medium-high heat. Add the onion, pepper, garlic, salt, chili powder, and oregano. Cook for about three to five minutes or until the veggies are fragrant and beginning to soften.
Stir in the tomato paste, chipolte chili and sauce; cook for another minute before adding the ground beef, breaking it up with a wooden spoon, and cook until the meat loses its raw color (about 5 minutes).
Add the broth and simmer for about 10 minutes. Stir in the tomatoes and the beans; bring to a boil. Cook, uncovered, stirring occasionally, until thick, about 10 minutes.
Ladle into your favorite bowl and top with your favorite chili toppings (ie. cheese, scallions, Greek yogurt, etc...).
