Chili Recipe:
3 pounds of ground beef
2 red bell pepper blistered and diced
4 Fresno chilis
4 guajillo chilis
2 ancho chilis
2 tbsp chipotle in adobo
1 large yellow onion diced
3 medium carrots diced
8 oz canned tomatoes
4 cups beef broth
1 12 oz can of IPA or stout for a richer broth
1 5-6 oz can tomato paste
1 tbsp Worcestershire sauce
1 1/2 tsp whole cumin
1 tsp whole coriander seeds
1/2 or 1 tbsp chili powder depending on spice tolerance
1 whole cinnamon stick
2 tsp smoked paprika
2 tsp onion powder
2 tsp garlic powder
1 15 oz can kidney beans
1 15 oz can of pinto beans
1 tbsp brown sugar
3 tsp kosher salt
2 tsp black pepper
Toppings:
Fried tortilla chips
Thinly sliced green onions
Grated cheddar cheese
Pickled red onions (optional)
Sour cream
Cast iron cornbread recipe:
3/4 cup cornmeal
1/4 cup polenta
1 cup all-purpose flour
1/3 cup caster sugar
1 tsp kosher salt
2 tsp baking powder
1 tsp baking soda
1 1/4 cups full-fat buttermilk
6 tbsp unsalted butter (2 for cast iron pan before adding batter)
1/3 cup avocado oil
2 whole eggs
Serve with honey, butter, and sea salt
Pickled red onions
1 1/2 large red onions
1 1/2 cups lemon or lime juice
1/4 cup red wine vinegar
2 tsp salt

Chili Con Carne Recipe - Mark's Cuisine #54

Ingredients for Chili Con Carne:
(serves 6)
1 onion
2-3 cloves of garlic
1-2 chilies fresh or dried (use milder ones, if you don't tolerate heat)
1 tsp dried oregano
1 tsp cumin powder
1 tsp cocoa powder
1 tbs of sugar
1 tsp of salt
3 tbs olive oil
1 lb/500g beef mince
2 rashers of bacon
2 tbs tomato paste
1 can of tomatoes
150g dried beans (kidney, navy, black eyed peas etc) soaked overnight
or alternatively 1 can of cooked beans
1 1/2 cups of red wine
1 tsp of salt
Directions:
1. If using dried beans, wash them first and soak overnight in a bowl with plenty of water.
2. Place saucepan on high heat and when it is hot, add olive oil and fry mince for 1 minute stirring constantly until there are no lumps and it has browned off. Place it in a bowl and set aside.
3. In the same saucepan fry bacon for 1 minute, then add onions, garlic, chili, sugar and salt and fry for 1-2 minutes or until onions are starting to colour and become translucent.
4. Add oregano, cumin and cocoa to onions and fry for 30 seconds, then add tomato paste and fry for another 20 seconds to get rid of its tart taste.
5. Add mince back and stir in, then put crushed Italian tomatoes and red wine into saucepan. Bring the sauce to a simmer, turn heat down, cover pan with a lid and cook for 30 minutes.
6. If you use dried beans, add them after 30 minutes and cook for another 30-45 minutes stirring occasionally. If you use canned beans (wash them first!), add them after 30 minutes and cook for another 5-10 minutes. Finally, taste for salt and serve. Note: the longer you cook the Chili Con Carne, the better the flavour will be!

1 lb 80/20 ground beef
1 lb ground pork
all purpose seasoning (or just salt, pepper, onion, garlic)
1-2 tsps beef bouillon powder
4-6 oz mexican beer
1 onion and bell pepper
2 jalapenos
1 can chipotle peppers in adobo
2-3 tbsps cocao powder
1 tbsp cumin, smoked paprika, chili powder
1 pinch of cinnamon
28 oz crushed tomatoes
1 can tomato soup
1 can light and dark red kidney beans
2-3 tbsps brown sugar
2 tbsps honey
1 tbsp roasted garlic
Toppings:
cilantro or chives, sour cream, cheddar cheese, fried onions, sliced jalapenos

Chili. It's delicious. Especially when you learn to make this simple recipe yourself. Or when you manipulate a friend to make beef chili for you. Also, beans. Who knew some people feel so strongly about beans in beef chili. I did. I feel strongly that I like chili with or without beans.

Alright to make this chili do something like this:
Brown around two pounds of beef by putting your skillet on medium high with a teaspoon of oil which you may not need if you beef is more fatty. Break it up in the pan then let it sit until a crust starts to form, then flip and do the same thing again
Dice a large onion and chop it up
Do the same with three cloves of garlic
Heat your chili pot on medium with some olive oil then sauté the onion until it starts to brown
Throw the garlic in during the last couple of minutes
Then add the beef with a teaspoon of salt and break it up more
Add in 28oz/790g crushed tomatoes
2 tablespoon chili powder
1 tablespoon cumin
1 to 1.5 cups beef broth…adjust as necessary
½ tablespoon of brown sugar
15.5oz/439g chatty bastard kidney beans
Then add hot sauce or more spice as desired.
Then add toppings, which don’t count as chili ingredients, because they are on top, not inside. They’re not really a part of the chili. The chili is it’s own thing. It’s like calling ketchup a hot dog. Ketchup isn’t a hot dog. It’s ketchup. It has it’s own life. Don’t argue with me here. It will get you nowhere and it will just waste both of our times. Especially if you’re right.

We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice
