How To make "Texas Red" Chili Con Carne
"Texas Red" Chili con Carne No. 2135 Yields 6 Servings
3 Lb Boned Beef Chuck, Cut 1 Tbls Cumin Seeds, Crushed
Into 1 1/2" Cubes & 2 tsp Salt Trimmed of all Fat 2 tsp Cayenne 1 Tbls Bacon Drippings 2 Cloves Garlic, Peeled &
6 Dried Ancho Peppers Crushed
2 Cups Cold Water 2 Tbls Masa Harina (Mexican
1 Tbls Oregano Corn Meal Flour)
3 Cup Water
Put the meat through the coarse blade of a meat grinder. Brown in small batches in the bacon fat in a large skillet over moderately high heat. Transfer the cooked meat to a second large heavy skillet using a slotted spoon. Set aside. Wash the peppers in cold water. Discard the stems and seeds. Tear the peppers into 2" pieces. Place the pieces in a small sauce pan with the first measure of (cold) water. Cover. Simmer 20 minutes. Drain, reserving the cooking water. Peel the skin from the peppers. Place in the work bowl of a food processor. Add the reserved water. Puree with short pulses. Mix the pepper puree into the beef. Add the second measure of water. Bring to a boil over high heat. Reduce heat to a slow simmer. Cover. Simmer for 30 minutes. Stir in all the remaining ingredients except the masa harina. Cover. Simmer 45 minutes. Mix in the masa harina. Cover. Reduce heat to the lowest possible. Cook 30 minutes longer, stirring occasionally so that the mixture doesn't stick. If too thick, thin with small amounts of boiling water. Serve.

3 ancho peppers
3 pasilla peppers
3 New Mexican dried peppers See my NOTES above on the dried pepper choices – I prefer a variety
2.5 pounds beef chuck cut into bite-sized cubes
2 teaspoons cumin
Salt and pepper to taste
2 tablespoons olive oil
1 medium white onion chopped
3 jalapeno peppers chopped
2 serrano peppers chopped (optional for extra heat – use extra jalapenos for milder)
4 cloves garlic chopped
2 cups beef stock or use a dark beer
2.5 cups water + more as needed (or use chicken or beef stock, or beer)
2 tablespoons masa harina corn flour, for thickening, if desired
1 tablespoon brown sugar
1 tablespoon Worcestershire
FOR SERVING: Chopped onion, spicy chili flakes, freshly chopped cilantro, lime wedges, crema or sour cream, Fritos or tortilla chips, whatever else you desire

How To Make Kevin’s Famous Chili from The Office
Scranton’s very own Kevin Malone, er, Brian Baumgartner, actor/comedian from “The Office,” stopped by the MUNCHIES Test Kitchen to make a batch of his famous chili from his new cookbook “Seriously Good Chili Cookbook: 177 of the Best Recipes in the World.”
Brian’s chili, which is inspired by Kevin’s infamous scene from “The Office,” has everything you could want: savory ground beef, ancho chili powder, and a clever secret ingredient (hint: it’s beans from a can).

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.
