The TORTA is the most popular Mexican sandwich. If there has ever been a no right way no wrong meal, it’s the TORTA. There are so many ways to recreate the Mexican Sandwich – you can use round buns, bolillos, any meats like bistek, ham, fajitas, or even no meat at all.
Depending what region of Mexico you are from or if you’re along the Texas border, that can be the influence of which bread and meats you decide to make your sandwich with.
But y’all know me, I gotta go big, so today we’re making this torta with FAJITAS, HAM and SAUSAGE! Let’s call it the three meat combo torta…sheesshhh!
We’re gonna get our blackstone plancha out and get it nice and hot for a good sear and extra flavor, I love me a good char on my griddle cooked meats.
After a quick cook we’re gonna slice everything up and get it ready for assembly.
This epic sandwich starts with laying down a nice layer of grilled jalapeño beans with cheese. Then we’re gonna stack our proteins nice and hearty. On the other side we’re gonna slather some avocado, put some lettuce and tomato down and put a nice drizzle of crema to top it off.
Alright, I’m already hungry just doing this intro! Let’s make us this epic TEX MEX TORTA…VAMANOSSSS!

Skim the top of the beef gravy to remove the excess oil
Ingredients:
For the enchiladas
Whit corn tortillas
Oil for frying
Medium cheddar cheese
For the beef chili gravy sauce
1/2 onion;small diced
2 minced garlic cloves
1 lb ground beef (80/20)
2 tsp ground cumin
2 tsp oregano
2 tsp black pepper
Salt to taste I used 1 1/2 tsp
3 1/2 unsalted beef broth
2 tbsp tomato paste
3 tbsp New Mexico chili powder
1 1/2 tsp paprika
1 1/2 tsp cayanne pepper
4 tbsp APF (all purpose flour)

Tex Mex Rice recipe
Tex Mex Rice, make this delicious rice in no time ????
Ingredients
Seasoning
2 teaspoon chilli powder
1 teaspoon paprika
1/2 teaspoon red pepper flakes
1 and half teaspoon cumin powder
1/2 teaspoon dried oregano
1 teaspoon black pepper
Other ingredients
3 tablespoon oil
1 chopped onion
3 minced garlic cloves
1 cup chopped capsicum mixed
Seasoning
200g chopped tomato
1 tablespoon salt or to taste
1 cup basmati rice (washed twice and soaked for 30 mins)
Boiling water 1 inch above surface of rice
Method
1) Wash rice twice in water and soak for 30 mins
2) Heat oil on a pan
3) Add onions and saute for three minutes
4) Add garlic and cook until onions are golden brown
5) Add capsicum and cook for one minute
6) Add seasoning and mix it in with onions and capsicum, make sure seasoning doesn't burn, stir well.
7) After one minute add the chopped tomatoes and mix well
8) Drain the rice and add, cook for around two minutes
9) Add the boiling water, make sure it is one inch above the surface of the rice, you should need around 1.5 cup water
10) gently stir then put on high heat and cover with lid for five minutes
11) After five minutes uncover and gently stir the rice then cover with lid, put on low heat for 10 minutes
12) After 10 minutes, turn off the heat and let it stand for 10 minutes
13) Fluff the rice up and serve

-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Lehsan powder (Garlic powder) 1 tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Dried oregano ½ tsp
-Cooking oil 2-3 tbs
-Lehsan (Garlic) chopped 1 tsp
-Beef qeema (Mince) 400g
-Pyaz (Onion) white chopped 1 Cup
-Tamatar (Tomato) deseeded & chopped 1 Cup
-Corn kernels boiled ½ Cup
-Shimla mirch (Capsicum) chopped 1 Cup
-Pickled jalapenos chopped ¼ Cup
-Olper’s Cheddar cheese ½ Cup or as required
-Olper’s Mozzarella cheese ½ Cup or as required
-Tortillas medium as required
-Maida (All-purpose flour) 2 tbs
-Water 2-3 tbs
-Cooking oil 1 tsp
Directions:
-In a bowl,add red chilli powder,salt,black pepper powder,garlic powder,red chilli crushed,cumin powder,dried oregano,mix well & set aside.
-In a pot,add cooking oil,garlic & fry until light golden.
-Add beef mince & mix well until it changes color.
-Add prepared spice mix,mix well & cook for 2-3 minutes,cover & cook on low flame for 8-10 minutes then cook on high flame for 1-2 minutes.
-Let it cool.
-In a bowl,add cooked mince,onion,tomato,corn kernels,capsicum,pickled jalapenos & mix well.
-Add cheddar cheese,mozzarella cheese,mix well & set aside.
-Cut tortilla in half.
-In all-purpose flour,add water & mix well.Flour slurry is ready!
-Apply flour slurry on one side of tortilla & fold it in a cone like shape,press & seal the edges.
-Fill tortilla cone with prepared mince filling.
-Grease frying pan with cooking oil & cook stuffed tortillas from both sides until golden brown & apply oil in between (makes 12 triangles quesadillas).
-Serve with tomato ketchup!

-Bowl mein cooked qeema,pyaz,tamatar,corn kernels,shimla mirch aur pickled jalapenos dal ker ache tarhan mix ker lein.
-Cheddar cheese & mozzarella cheese dal ker ache tarhan mix karein & side per rakh dein.
-Tortilla ko half mein cut ker lein.
-Maida mein pani dal ker ache tarhan mix ker lein.Flour slurry tayyar hai.
-Tortilla ki ek side per flour slurry laga lein aur fold ker ka cone tayyar ker lein phir press ker ka edges ko seal ker lein.
-Tortilla cone mein tayyar qeema filling bhar dein.
-Frying pan ko cooking oil sa grease karein aur stuffed tortillas ko dono sides sa golden-brown ho janay tak paka lein aur bech bech mein oil laga lein (makes 12 triangles quesadillas).
-Tomato ketchup ka saath serve karein!
