Pan fry ground beef until light brown in skillet. Drain fat. Add onions and peppers and cook until onion is tender. Stir in rest of ingredients and heat until warm. I love my one-dish recipes, especially with a cast iron, but this has to be near the top of my list. I mean, with potatoes, bacon, jalapeños, guacamole, and tortillas to top, how could you go wrong?? This dish is not only super easy, (one of the ingredients is store-bought guacamole!) it brings out the best in its simple yet dependable ingredients and makes an absolutely delicious dinner. Easy Tex-Mex Hash 1 lb. lean ground beef 1 Tbsp. oil 3 cups frozen potatoes O’Brien with onions and peppers (from 24-oz. pkg.) 1 cup chunky-style salsa 2 tsp. chili powder 1 cup shredded Colby-Monterey Jack cheese blend (or cheese of your preference) 1. Brown ground beef in large nonstick skillet until thoroughly cooked, stirring frequently. Remove ground beef from skillet; cover to keep warm. Discard drippings. 2. In same skillet, heat oil over medium heat until hot. Add potatoes; cook and stir 8 to 10 minutes or until browned. 3. Stir in salsa, chili powder and cooked ground beef. Cook 5 to 8 minutes or until thoroughly heated, stirring occasionally. 4. Sprinkle with cheese. Cover; cook 2 to 4 minutes or until cheese is melted. Enjoy!
