Sweet and Sour Pork Ribs/糖醋排骨: Sweet Tangy Ribs in 45 minutes
A dish that is easy to cook in less than 45 minutes? Something that is sweet, tangy and well-liked by children? Soft and easy to chew meat Suitable for the elderly?
Look no further, you're talking about Sweet Vinegar Pork Ribs. It's actually really easy to make with only 9 ingredients, takes no marinating and takes around 45 minutes, with 40 minutes of simmering!

Blancing Pork - 2:15
Cooking - 4:45

The ratio of the ingredients are also really easy to remember:
500g Prime Ribs
4tbsp Sugar
3tbsp Soy Sauce
2tbsp Dark Vinegar
1tbsp Cooking Wine (Shao Hsing Wine, Dry Sherry if cannot find in Western Countries)
Aromatics:
Ginger
Star Anise
Bay Leaf
Optional:
Cilantro/Spring Onions for garnish
Directions:
1. Blanch Pork in boiling water and rinse in running water.
2. Melt Rock Sugar at low heat
3. Add Ribs once melted and caramelised
4. Sauce and add aromatics
5. Bring the mixture to a boil.
6. Add water and simmer at low heat for at least 40 minutes. Remove aromatics at 45 minute mark if intending to boil for longer than that.
7. Remove the pork ribs and turn on high heat to thicken the sauce.
8. Pour the sauce over the ribs
9. Garnish the ribs with Cilantro and serve.

1 piece star anise
1 piece of cinnamon bark (5 - 7 cm)
1 thumb size young ginger - minced
2 pieces shallots minced
4 cloves of garlic - minced
1 cup of Chinese rice wine
2 tablespoons of brown sugar
1 tablespoon of hoisin sauce
1 tablespoon of oyster sauce
2 tablespoons of low sodium light soy sauce
2 tablespoons of premium dark sauce
2 tablespoons of rice vinegar (or apple cider)
Enough water to cover the ribs
