Cooking Video - Pineapple Ribs on the Grill
Ontario Pork's Nutritionist, Andrea Villneff demonstrates how to prepare Pineapple Ribs on the Grill.
Ingredients
2 racks Ontario pork back ribs (2 lbs)
1 Tbsp (15 mL) vegetable oil
2 medium onions, chopped
1 Tbsp (15 mL) chopped garlic
2 cups (500 mL) vegetable broth
2 cups (500 mL) chopped pineapple, fresh or canned
1 Tbsp (15 mL) honey
1 Tbsp (15 mL) Worcestershire sauce
1 Tsp red pepper flakes
1 Tbsp (15 mL) corn starch
3 Tbsp (50 mL) chopped fresh cilantro - optional
Cooking Instructions
1.Pre-heat oven to 325°F (160°C).
2.Remove silver skin from the concave (bone side) of the ribs.
3.Pre-cook ribs in the oven by placing them on a cookie sheet or shallow roasting pan, add about 1/2 inch (1.25 cm) of water. Add a few slices of lemon or orange to the pan. Place the ribs, meaty side up, on the sheet/pan in a single layer. Cover tightly with aluminum foil and place in oven. Cook for one and a half hours, or until meat is easily pierced with a metal skewer. Once the ribs are pre-cooked, they can be stored for up to three days in the refrigerator for later use.
4.In a large saucepan, heat oil over medium-high heat, add onions and garlic to pan and cook until onions soften. Add vegetable broth, corn starch, pineapple chunks, honey, Worcestershire sauce, and pepper flakes. Bring to a rolling boil, turn down and allow the sauce to simmer and thicken, this will take around 15 minutes. Split this mixture into two separate bowls.
5.Turn the BBQ on High for around 10 minutes and then reduce to medium-high. Place the ribs on the BBQ and glaze them with the pineapple mixture. Do this every 10 minutes for half an hour.
6.Top the ribs with additional sauce and sprinkle with chopped cilantro.
Pineapple Brown Sugar Ribs Smoked On The Oklahoma Joe's Highland
Pineapple goes fantastic with pork, so I decided to incorporate that flavor into a rub for a pair of Sparerib racks and smoke them up on the Oklahoma Joe’s Highland offset smoker, with the addition of a Zesty Orange BBQ Sauce to finish them off.
Pineapple Brown Sugar Rub Ingredients
1 oz Freeze Dried Pineapple
1 ½ cups Brown Sugar
½ tsp Cayenne Pepper
BBQ Sauce Ingredients
18 oz BBQ Sauce
4 oz Cactus Cooler Soda (or another Orange Pineapple soda)
1 TBSP Orange Zest
