Swiss Steak is a perfect family dinner; it’s easy to make and can be cooked either in the oven or in the slow cooker. This dish has delicious tender beef in a rich tomato gravy and is perfect served over rice, noodles or mashed potatoes!

INGREDIENTS:
2 lbs bottom round steak
1 cup all-purpose flour
Salt and pepper
2 tbsp bacon grease, or vegetable oil
1 cup onion, chopped
1 cup carrots, chopped
1 cup celery, chopped
2 cloves garlic, minced
2 tbsp tomato paste
1 28 oz can whole tomatoes, drained
1 tsp dried thyme
1 tsp dried oregano
1 tbsp Worcestershire sauce
2 bay leaves
2 tbsp fresh parsley, for garnisH

Hawaii Firehouse Swiss Steak

2 lb. chuck steak
2 tsp. salt
1 tsp. pepper
3/4 c. flour
1/4 c. oil
1 large onion, chopped
2 cloves garlic, minced
2 stalks celery, chopped
1 tsp. tomato paste
1 (14.5) oz. can diced tomatoes
1 tsp. smoked paprika
1 tsp. oregano
1 Tbsp. Worcestershire sauce
1 1/2 c. beef broth
Preheat oven to 325 degrees. Cut meat into small pieces. Season both sides with salt and pepper. Dredge meat in flour. Add oil into large skillet and heat on medium high.
Once oil is hot enough to fry, then add meat. Brown both sides of meat approximately two minutes on each side. When done frying all the meat, remove and set aside. Add onion, garlic and celery to the pan. Saute for 1-2 minutes then add tomato paste to vegetables. Next, add diced tomatoes, paprika, oregano, Worchestershire and beef broth to mixture. Place meat in large baking pan with foil and seal tightly. Place pan in oven on middle rack. Cook for 2 to 2-1/2 hours or until meat is tender.

Slow Cooker Swiss Steak
In this video, I make some delicious slow cooker swiss steak. The result is deliciously tender steak with a tomato sauce that’s packed with flavor.

The name for this dish refers to the swissing method that is used on the meat. Swissing means tenderizing the meat by pounding or rolling.
You will find quite a few different variations on the swiss steak sauce. Some will have a lovely gravy with mushrooms and others will be more like this recipe. I prefer a tomato sauce that’s packed with delicious vegetables.
There are plenty of extras that go great with some swiss steak. For example, mashed potato, cauliflower cheese or even just peas and carrots.
All the ingredients that I made use of for this recipe are listed right below.
Steak
1kg (2.2 lb) chuck steak
½ cup flour
1 tsp salt
¼ tsp black pepper, ground
Sauce
½ cup red wine
1 onion, diced
1 tsp. garlic
1 celery stalk, diced
1 carrot, diced
1 tsp oregano
1 Tbsp Worcestershire sauce
400g (14 oz) crushed tomatoes
½ cup beef stock
There are plenty of changes that you can make to the sauce. For example, you can add some sliced mushrooms or even some other vegetables.
Fresh tomatoes can be used instead of the crushed tomatoes. Keep in mind that you will end up with tomato skins in your sauce unless you remove them.

Betty's Pounded Round Steak with Onion Mushroom Gravy
Betty demonstrates how to make Pounded Round Steak with Onion Mushroom Gravy. This is a hearty entrée for family or guests to enjoy.
Pounded Round Steak with Onion Mushroom Gravy
2 pounds round steak, cleaned of excess fat and cut into 12 equally-sized pieces
freshly-ground sea salt
1 ½ cups flour
1 cup peanut oil (You may use any type of vegetable oil.)
freshly-ground black peppercorns
3 tablespoons butter
1 chopped onion (about 1 ½ cups)
1 ½ cups chopped fresh portabella mushrooms
2 additional tablespoons butter
4 tablespoons flour
2 cups water
Place each piece of round steak on a cutting board and cover with a couple of thicknesses of plastic wrap. Pound with a meat mallet until about 3/8-inch thick and well-tenderized. Grind sea salt over both sides of the pounded steak. Place 1 ½ cups flour in a gallon-sized plastic bag. Place salted steak pieces in bag containing flour, and shake until steak is well-coated with flour, about 4 steak pieces at a time, until all pieces are coated. Heat 1 cup peanut oil in a large skillet over medium heat. When oil reaches 350 degrees (F), shake excess flour from steak pieces and place them into the hot oil in a single layer, if possible (but overlapping, if necessary). Grind fresh black peppercorns over steak in skillet. Shallow fry steak pieces until they are brown on the bottom and done halfway through. Use tongs to turn each piece. Grind fresh peppercorns over top again. Cook steak until bottom is brown, and fully cooked. Turn off heat and remove steak pieces to a platter that is lined with paper toweling. Tent the platter with aluminum foil, to keep steak pieces hot while they rest. To make the gravy, melt 3 tablespoons butter in a medium-sized saucepan over medium heat. Add 1 chopped onion and 1 ½ cups chopped fresh portabella mushrooms and sauté until onion is clear. Set aside. Pour off oil from skillet in which the steak pieces were cooked, leaving the crisp crumbs from the steak. Add 2 tablespoons butter to the skillet and set heat to medium. When butter is melted, add 4 tablespoons flour. Cook the butter and flour, along with the steak crumbs, stirring constantly, forming a roux, about 5 minutes. Add about 2 cups of water (start with less), and bring back to a boil, stirring constantly. Cook for about 5 minutes, or until gravy is of desired consistency. Add more water if gravy is too thick. Add more flour if gravy is too thin. Complete the gravy by adding sautéed onions and mushrooms, as desired. (I only added half of the amount of onions and mushrooms I had sautéed, saving the rest for serving alongside the steak and gravy.) Transfer fried steak pieces from paper toweling to a nice serving platter. Spoon Onion Mushroom Gravy over top of steak pieces. Serve immediately, with remaining sautéed onions and mushrooms at the side. This method of making round steak makes the steak very tender and tasty. I hope you enjoy it! --Betty :)

For a tasty vegetable side dish, try green beans with bacon bits - and add some bell pepper.
I have heard of people also topping the instant pot swiss steak with cream cheese.
Egg Noodles make another side alternative.
Swiss Steak Crock Pot Recipe
Use this easy recipe to make slow cooker swiss steak. However, cooking the green beans and potatoes separately.
Use the same ingredients, and cook on low heat for 6 hours or high for 3-4 hours. Then take out the steak and make a slurry with cornstarch and water to thicken the gravy.
How to Make Swiss Steak in Oven
You can use our recipe to make swiss steak in the oven too. Again, cook the potatoes and green beans separately.
First, sear the steaks on each side and then add them to a dutch oven along with remaining ingredients and cover and bake at 350 degrees for 2 hours, or until meat is tender. Then make the cornstarch and water to make the slurry and thicken, while heating the dutch oven on the stovetop over medium heat to cookout the flavor of the corn starch.
