Swiss Steak in the Slow Cooker
One of my favorite meals mom made when I was growing up was Swiss Steak. I just thought the rich sweet tomato taste of the sauce, along with all the onions was the best. She cooked it all day long in the crock pot or in the oven. The meat just fell apart. So after someone asked me for a recipe for Swiss Steak today, I decided I should just make it myself in the slow cooker. I am so glad I did. It brought back such great memories. I think y’all are going to love this recipe as well.

RECIPE for Crockpot Swiss Steak:
Beef Patties
2-3 lbs lean ground beef
1 tsp salt
1/2 tsp black pepper
1 lg egg
2-4 tbsp butter or bacon grease
1/3 cup Flour
1 pinch salt and pepper
Brown Mushroom Gravy
1 lg onion diced
1 clove garlic minced
8 tbsp butter split into 4oz chunks
2 cups fresh mushrooms chopped
1/3 cup all-purpose flour
4 cups strong beef broth (What I use:
pinch salt and pepper
2 tsp dried thyme
2 tsp balsamic vinegar
1 splash Worcestershire sauce
Instructions
Mix ground beef with salt and pepper and 1 large egg; shape into generous size patties
Mix flour, salt and pepper on a small plate. Dredge beef patties and make sure they are evenly coated with flour mixture
Melt butter or bacon grease in large skillet and heat over med/high heat until pan is hot.
Add patties and cook about 2-3 minutes per side. You want to sear in the juices and make the outside nice and brown. You may need to work in batches
Remove patties from pan and place in crockpot
Add onion to skillet after the patties have been seared. Cook for 5-7 minutes until golden brown.
Add minced garlic and cook for 1 minute
Add 4 tbsp butter to onions and garlic, and then add mushrooms. Cook another 5-7 minutes until all liquid is evaporated and the mushrooms are golden brown
Add 4 tbsp butter to onions and mushroom and add 1/3 cup flour. Cook for about 1 minute, making sure everything is evenly coated with the flour
Slowly add the beef broth, carefully scraping up the brown bits from the bottom of the pan
Add salt and pepper to taste, thyme, balsamic vinegar, and Worcestershire sauce. Stir and cook until the gravy thickens, about 3-5 minutes
Pour gravy over patties in crockpot. Cover and cook on high for 2-3 hours
Serve with rice or mashed potatoes. Enjoy!

Swiss Steak
Swiss steak is tender and delicious. Interestingly enough, the dish is not Swiss. The process used to tenderize it is referred to as swissing. This means that it is pounded in order to tenderize it. I love swiss steak served up with a side order of mashed potatoes with the juices from the steak spooned over them. Watch the video and give this delicious dish a try.
