How To make Sweet & Savory Appetizer Puffs
PUFFS:
1 c Water
1/2 c Butter
2/3 c All-purpose flour
2/3 c Whole wheat flour
5 Eggs
FILLING:
12 oz Neufchatel cheese
-OR- cream cheese 1 c California dried figs
- (finely chopped) 9 sl Bacon
-- crisply cooked & crumbled 2 tb Chutney
For puffs, bring water and butter to a boil. Add flours, all at once, stirring well for about a minute. Turn dough into mixer bowl or food processor. Add eggs (one at a time, if using mixer; all at once if processor). Mix or process until smooth and shiny. Drop by rounded teaspoonfuls onto greased baking sheet. Bake in a 400 degree F. oven for 20 minutes, until well browned. Cool. Split. Fill each puff with about 1-1/2 teaspoons of filling. For filling, combine all ingredients in a small bowl blending well.

Cream Puffs!! Sweet treat or as a savory appetizer!!
These are simple pastries. It’s actually a French pastry dough called pate a choux…..to my Momma they were simply cream puffs!!!
Here’s how to do it!!
First I make my filling which is just instant pudding, I used vanilla but whatever flavor you like or have on hand!! Make as directed for pudding, I made 2 small boxes (4 cups cold milk). It made enough filling for all of the cream puffs in this batch
In a sauce pan over medium high heat add:
1 cup water
1 stick of butter
When the butter has melted and the water is boiling turn off burner and add:
1 cup all purpose flour
1/4 teaspoon salt
Stir stir stir until it forms a ball making sure all of the flour is completely mixed in. Let cool completely, I put mine in the fridge about 15 minutes then the freezer for 5 or so, until it had no heat to the touch.
Preheat your oven to 400 degrees
Add 4 eggs one at a time making sure that each egg is fully and completely mixed into the dough before you add the next one. If you don’t mix them in one at a time, completely, your dough will never come together and you’ll have soup. Just be patient and stir stir stir after each egg.
Once you have your dough ready drop by spoonful onto parchment lined cookie sheets. I used a large spoon but you can certainly make them larger.
I also did small ones to show you how to make them if you wanted them for an hors d’oeuvres, little mini
Sandwiches, which I stuff with chicken salad, tuna salad, eggs salad.
Bake at 400 for 20-25 minutes until golden brown. Remove and let cool.
I melted chocolate and dipped the tops in chocolate, completely optional.
I let the chocolate set up in the fridge for like 5 minutes then filled them with the pudding. See the video for how I filled them.
These are easy and will get rave reviews!! Once batch will make at least between 14-16 pretty good size cream puffs. About 60-70 little ones if you use them for an appetizer.

Sweet & Savory Puff Pastry Twists
Today we are baking crunchy pastry twists with homemade puff pastry. A savory version with feta and mixed hard cheeses filling and a sweet version filled with tahini paste, almond powder and chocolate chips.
They keep well for 4 to 5 days in a metal container. Enjoy!!!

Sweet & Savory Puff Pastry Twists
Ingredients (for 32 sticks)
For the sweet filling
120 g tahini
50 g almond powder
100 g chocolate chips
2 egg whites
zest of an orange
For the savory filling
200 g feta cheese
200 g hard cheeses mixed
1 egg white
sesame seeds
1 large egg for brushing
1 dose puff pastry dough ( )
flour for rolling out

Puff pastry ideas for a tasty appetizer or savory treat!
1. Puff pastry spoons
INGREDIENTS 1 sheet of puff pastry 150g cream cheese 150g tuna
METHOD
Place the spoons on the puff pastry and cut around them. Shape the spoons and bake them at 200°C for 20 minutes.
Brush the spoons with olive oil or butter so they don’t stick to one another as they bake.
In the meantime, prepare the tuna mousse by mixing the tuna and cream cheese together.
Decorate the spoons with some cherry tomatoes and basil.
2. 100 pizza bites
INGREDIENTS 2 sheets of puff pastry tomato puree oregano Parmesan cheese, as needed
METHOD 1. Spread the tomato puree over one sheet of puff pastry. Sprinkle with oregano and Parmesan cheese and then cover it with the other sheet of puff pastry. 2. With a pizza cutter, cut it into squares. Bake at 190°C for 20 minutes. 3. Let it cool before separating the squares.
3. Multicolor tomatoes tart
INGREDIENTS • Fresh mozzarella • Puff pastry • Herbs • Oil • Egg • Tomatoes (different types) METHOD
Wash all tomatoes and cut them into slices.
Do the same with the mozzarella balls.
Place a bowl face down in the center of the puff pastry.
Brush egg all over the pastry puff, respecting the center of the bowl.
Place the different types of tomatoes alternating with the mozzarella slices.
.Remove the bowl and cut in 4, creating 8 triangles.
Sprinkle herbs over the tomatoes.
Fold the middle triangles of puff pastry over the top of the tomatoes.
Add oil to the entire tart and then brush over more egg.
Bake for 40 minutes at 200ºC (392ºF).
