How to make an Apple Pie - The Happy Pear - Dairy Free, Refined Sugar Free
We're well and truly into September and that means it's apple season so we decided to share a healthier apple pie recipe with you all. We created a dairy free pastry alternative and a beautiful glaze to bake your apples in. If you have any amazing family recipes share them around and we can all have a deliciously creative autumn.
apple sauce -
1 large cooking apple grated
1 tbsp honey
pinch cinnamon
for the crust
140g almond meal
200g oats (use gluten free if celiac)
100g melted coconut oil
4 tbsp apple sauce
apple filling
800g apples
6 tbsp orange juice
maple coconut glaze
4 tbsp maple syrup
cinnamon
6 tbsp orange
4 tbsp coconut oil
2 tbsp almond butter
First step preheat the oven to 180 degrees
next make your apple sauce by grating the apple into a medium pan, add the honey/ agave and the cinnamon and cook on a medium heat for 4-5 mins stirring regularly to ensure nothing burns. Cook until the apple has broken down and is like an apple sauce. Take off the heat and add to a large mixing bowl
In a blender or food processor blend the oats until they reach a flour like consistency. Melt the coconut oil. Add the oat flour, almond flour and coconut oil into the large bowl with the apple sauce and mix well until it forms a nice dough.
Get your pie dish and spread the dough really evenly ensuring to put it up the side. Work hard to ensure you have an even spread so that it cooks evenly, it should be approx 1/2- 1cm thick all over
Put this in the preheated oven and bake for 15 mins at 180 degrees.
while the base is baking time to prepare your apples. Slice the apples into thin slices. In a large sauce pan add 3 tbsp of orange juice and 1/2 of the apples and cook for 3-4 mins on a high heat until the apples start to soften. Stirring gently so that they all cook evenly but not too rough as you want them to hold their form. Repeat for the other half of apples.
last step is to make the glaze; in a saucepan on high heat add all the ingredients and stir regularly until it comes to the boil, reduce the heat and leave it simmer for 1 min.
One your pie crust is cooked remove from the oven and layer in the apples, you can make a really pretty design by starting at the outside and simply layering one slice ontop of the next and follow a circular design to the centre, repeat until you have used all apples.
Lastly pour on the glaze onto and bake in the oven for 15 mins at 180 degrees
enjoy!
All the best,
Dave & Steve.

Ultimate Sugar Free Apple Pie Recipe for Health Conscious Dessert Lovers
Ultimate Sugar-Free Apple Pie Recipe for Health-Conscious Dessert Lovers
In the quest for healthier eating habits, sugar is often the first ingredient on the chopping block. However, this doesn't mean having to sacrifice beloved desserts like the classic apple pie. A sugar-free apple pie is not only a healthier option but can be just as delicious as its sugar-laden counterpart. This guide will walk you through creating a delectable sugar-free apple pie, ensuring you can indulge in this timeless dessert without the guilt associated with traditional sugar.
Understanding Sugar-Free Baking
Baking without sugar can be a unique challenge. Sugar plays several roles in baking, from providing sweetness to affecting texture and color. In sugar-free baking, the key is to find substitutes that not only replace the sweetness of sugar but also mimic these properties to some extent.
Ingredients for Sugar-Free Apple Pie
1. Crust:
- Whole wheat flour or almond flour: These are healthier alternatives to white flour.
- Butter or coconut oil: To add richness and help achieve a flaky texture.
- Egg: Helps bind the crust together.
- Sugar-free sweetener: Such as erythritol, stevia, or a blend of sugar-free sweeteners.
2. Filling:
- Apples: Choose naturally sweet varieties to reduce the need for added sweeteners.
- Cinnamon and Nutmeg: Provide classic apple pie flavors without sugar.
- Lemon Juice: Adds a hint of tartness and balances the flavors.
- Sugar-free sweetener: Adjust according to your taste and the sweetness of the apples.
- Thickener: Such as cornstarch or a sugar-free thickening agent like xanthan gum.
3. Topping (Optional):
- Sugar-free whipped cream or a sprinkle of cinnamon for serving.
Preparing the Sugar-Free Apple Pie
1. Making the Crust:
- Combine flour, sugar-free sweetener, and a pinch of salt.
- Work in the butter or coconut oil until the mixture resembles coarse crumbs.
- Add an egg to bring the dough together.
- Press into a pie dish and pre-bake until slightly golden.
2. Making the Filling:
- Peel and thinly slice the apples.
- Toss the apple slices with lemon juice, sugar-free sweetener, cinnamon, and nutmeg.
- Cook the mixture until the apples are slightly softened.
- Add the thickener and cook until the filling has thickened. Let it cool slightly.
3. Assembling and Baking the Pie:
- Fill the pre-baked crust with the apple filling.
- Optionally, add a top crust or lattice, and brush with a beaten egg for a golden finish.
- Bake until the crust is golden brown and the filling is bubbly.
Tips for Perfect Sugar-Free Apple Pie
- Selection of apples is crucial. Opt for varieties that are naturally sweet like Fuji, Gala, or Honeycrisp.
- Be careful with sugar-free sweeteners as they can vary in sweetness intensity. It's best to taste as you go.
- Allow the pie to cool before slicing to let the filling set properly.
Serving the Sugar-Free Apple Pie
This apple pie can be enjoyed warm or at room temperature. For an extra touch of indulgence, top it with sugar-free whipped cream or a light sprinkle of cinnamon.
Conclusion
A sugar-free apple pie is a perfect solution for those looking to reduce sugar intake without sacrificing their love for desserts. By carefully selecting ingredients and using sugar substitutes, you can create a pie that is both delicious and healthier. This recipe is a testament to the fact that with a little creativity, you can enjoy classic desserts in a way that aligns with your health goals.

Sugarfree Apple Pie Recipe
I wanted to create an apple pie recipe without sugar and less all-purpose flour for a long time :) I finally had time to experiment and create this Sugarfree Apple Pie Recipe :)
You will need:
Around 1kg of apples (7-8 big apples)
1 quince (optional)
150g butter (2/3 cup)
150g all-purpose flour (1 cup)
100g chopped walnuts (1 cup)
100g almond flour (1 cup)
Pinch of salt
1 tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp clove
1/2 tsp allspice
A bit of ginger
2 tbsp erythritol
Liquid sweetener, I used Stevia
1-2 tbsp cold water
4tsp potato starch
Start by mixing the dry ingredients. Add the butter, make sure that it's cold. I let mine out for too long and my crust is not as flaky as I wanted it to be. Incorporate the butter into the dry ingredients, don't overwork the dough. Add cold water and liquid sweetener, combine. Leave in the fridge while you work on your filling.
Peel the apples and cut them into pieces. Leave two to grate.
Grate the quince as well. Adding a quince is optional :)
Transfer the grated apples and quince to a pan, set the temperature to medium heat. Add erythritol and cook on medium heat until soft. Add the liquid sweetener and the spices, mix. Add about half a glass of water and cook down to a sauce. Add sliced apples and cook on medium heat until soft. Add starch of your choosing, I used potato starch but you can use tapioca, corn, whichever you have :) You can substitute with all-purpose or rice flour.
Once the apples are soft set aside to cool.
Take the dough out of the fridge and it warm up to room temperature. Split in half.
Roll out the dough for the bottom crust and transfer to a pie pan.
I use a 27cm (10inch) pan.
Put the pan with the dough into the fridge.
Roll out the dough for the top crust/decorations and have fun with it :)
Pour the filling in (make sure it's cooled down).
Decorate :)
Bake at 190C (375F) for 30-35 mins
Enjoy :)

Make This Apple Pie Filling for your Pies & Tarts
Print the Recipe:
Ingredients
10 apples, peered, cored, and sliced
4 oz (114 g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup heavy whipping cream
Instructions
Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. The apples should be fork tender. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks.
Notes
If the apples release too much liquid, the filling may take longer to thicken. To prevent the apples from getting mushy, combine a tablespoon of cornstarch with 2 tablespoons of warm water together in a bowl. Whisk tigether and add to the filling. This will help thicken the juices faster. If the filling gets too thick (too much cornstarch), thin it out with some more heavy cream and a splash of water or apple juice.
