How To make String Beans & Coconut Koora
Stephen Ceideburg 1 lb Green beans, trimmed
Salt to taste 1/2 ts Turmeric
1 tb Corn oil
1 tb Chana dal
1 tb Urad dal
1/2 tb Mustard seeds
1/2 tb Cumin seeds
3 Whole red chile peppers,
-broken up by hand into -pieces 1/2 tb Curry leaves (optional)
2 tb Shredded, unsweetened
-coconut Cut beans, crosswise, into 1/4 inch pieces. Boil with salt and turmeric until tender, about 10 minutes. Drain and set aside. Heat oil in a small saucepan or skillet. When oil is hot, lower heat and add chana dal, urad dal, mustard seeds, cumin, chili peppers and, if using, curry leaves. Stir, cooking until dal turns golden and mustard seeds pop. Beans Poriyal (Beans Stir Fry)
Ingredients:
Beans - 250 gms
Oil - 2 tsp
Chana dal - 1/2 tsp
Urad dal - 1/2 tsp
Mustard seeds - 1/2 tsp
Red chilis - 2 nos
Asafoetida powder - 1/4 tsp
Onions
Green chilis - 3 nos (slit)
Few curry leaves
Turmeric powder - a pinch
Salt
Fresh grated coconut
Method:
1. Heat oil in a wide pan. Add chana dal, urad dal, mustard seeds, red chilis, asafoetida powder, onions, green chilis, curry leaves and turmeric powder.
2. Saute till onions turn transparent. Now add beans. mix well and sprinkle a table spoon water.
3. Close and cook for 2 minutes
4. Now add salt and mix well. Again, sprinkle a table spoon of water and close and cook till done
5. Turn off the stove and add grated coconut. Done!

Two vegetables in a mildly spiced coconut milk curry, this vegan-friendly beans and potato white curry is hearty and lean enough to enjoy every day.
