MAHARAGE RECIPE | Kidney Beans in Coconut Milk | Maharagwe - East African Style Coconut Kidney Beans
In this video, we show you a Maharage Recipe, which is made using Kidney Beans in Coconut Milk. Maharagwe is the Swahili name for these East African Style Coconut Kidney Beans which are very popular in Tanzania and Kenya. Maharage (or Maharagwe) are absolutely delicious and nutritious Kidney Beans that have a rich, creamy coconut milk based curry or masala.
We served the Maharagwe with the following items (with links to our recipes):

To make the Maharage Recipe (Kidney Beans in Coconut Milk) you will need:
3 tbs oil
1/2 tsp cumin seeds (jeera)
1/2 tsp fenugreek seeds (methi)
1/2 tsp mustard seeds (rai)
6-7 curry leaves
1/4 tsp asafoetida (hing)
1 tbs grated ginger
1 tbs grated garlic (we're using frozen ginger, garlic and green chilies)
1/4 tsp carom seeds (ajwain)
1/2 tsp turmeric powder (haldi)
1/2 tsp Kashmiri chili powder
1 tsp coriander powder (dhania)
salt to taste
1 medium-sized tomato blended in the grinder
1 tbs crushed green chilies (or to taste)
1 tbs tomato puree
a little hot water depending on the consistency you prefer
1 tsp sugar
1 whole bullet chili
1 cup kidney beans that were soaked overnight with 1/4 tsp bicarbonate of soda, and then boiled in salt water until soft
1 cup coconut milk
1-2 kokum (this gives a tangy flavour but you can use lemon juice instead)
1/2 tsp cumin powder
1 tbs lemon juice
1/4 tsp black pepper
fresh coriander
extra coconut milk for garnishing

A coconut is the edible fruit of the coconut palm (Cocos nucifera), a tree of the palm family. Coconut flesh is high in fat and can be dried or eaten fresh or processed into coconut milk or coconut oil. The liquid of the nut, known as coconut water, is used in beverages.
Coconut milk has the liquid consistency of cow's milk and is made from simmering one part shredded coconut in one part water. Coconut milk is the basis of most Thai curries. Coconut cream is much thicker and richer. It is made from simmering four parts shredded coconut in one part water.
Bean stew is a hearty soup made with all sorts of vegetables, seasoned broth, and of course, white beans! It's chock full of amazing ingredients, and your body will thank you later for filling it up with such good and healthy things! White beans are a nutritional powerhouse and packed with good protein and fiber.

Coconut Kidney Bean Curry
Servings - 2 - 3
INGREDIENTS
Kidney beans - 200 grams
Water - 1.5 litres, divided
Salt - 1 teaspoon
Oil - 2 tablespoons
Ginger - 2 teaspoons
Garlic - 2 teaspoons
Onions - 150 grams
Tomato - 240 grams
Curry powder - 1 teaspoon
Salt - 1/4 teaspoon
Chilli flakes - 1/2 teaspoon
Coconut milk - 500 milliliters
Coriander - 1 tablespoon
PREPARATION
1. In a bowl, add 200 grams kidney beans, 500 milliliters water and soak for overnight.
2. Take a pressure cooker, add 1 litre water, soaked kidney beans, 1 teaspoon salt and cover it with lid.
3. Cook until you hear 5 - 6 whistles.
4. Open the lid and remove it from heat.
5. Heat 2 tablespoons oil in a heavy skillet, add 2 teaspoons ginger, 2 teaspoons garlic and stir well.
6. Then, add 150 grams onions and fry till translucent or until it turns golden brown in color.
7. Now, add 240 grams tomato and mix it well.
8. Saute for 5 - 7 minutes on medium heat or until it turns soft and pulpy.
9. Add 1 teaspoon curry powder, 1/4 teaspoon salt, 1/2 teaspoon chilli flakes and mix it well.
10. Then, the boiled kidney beans and mix it well.
11. Cook for 5 - 7 minutes on medium heat.
12. Now, add 500 milliliters coconut milk and mix it well.
13. Bring it to a boil.
14. Add 1 tablespoon coriander and mix it well.
15. Cook for another 5 - 7 minutes on medium heat.
16. Remove it from heat.
17. Garnish with coriander.
18. Serve hot.
Jamaican Coconut Rice & Peas (actually, beans!)
I don't know if it's just me, but I can NEVER get coconut rice to work on the stove. Baking is the way to go! Fluffy rice, every time, and no scorched base. TRY IT!
