How To make Stir Fried Caribou with Black Bean Sauce
SAUCE: 3/4 c Dried black beans
3 c Stock
1 1/2 ts Fresh ginger; chopped
2 cl Garlic; minced
1 Chile pepper; chopped finely
3 tb Sherry wine vinegar
1/2 ts Salt
STIR-FRY: 8 oz Caribou, deer or beef steak
1 tb Sesame oil
1 tb Chopped fresh ginger
1 cl Garlic, finely chopped
2 Celery ribs; julienned
1/2 c Mushrooms; fresh, sliced
1/2 md Onion; sliced vertically
-into crescent fans 1 c Bean Sprouts
To make sauce: Soak the beans in water overnight, rinse and drain. Combine black beans, stock, ginger, garlic, chile and vinegar in a saucepan and bring to a boil over high heat. Reduce heat and simmer, covered, until beans are tender, about 1 hour. Pour into blender or food processor, add the salt and blend until smooth. Return to the saucepan and hold over a low heat. To make stir-fry: Trim all the fat from meat and cut, against the grain, into quarter-inch strips. Place oil in a nonstick skillet or wok over high heat. Add the meat and stir fry for a few seconds. Add ginger, garlic, celery, mushrooms and onion; stir fry until vegetables are tender-crisp. Add sprouts and and a cup of the sauce, cover and cook a further 30-40 seconds and remove from heat. Serve with steamed rice and pass the rest of the sauce at the table. Jim Weller

Nasi goreng
Nasi goreng, literally meaning fried rice in Indonesian, is an Indonesian rice dish with pieces of meat and vegetables added. It can refer simply to fried pre-cooked rice, a meal including stir fried rice in a small amount of cooking oil or margarine, typically spiced with kecap manis (sweet soy sauce), shallot, garlic, ground shrimp paste, tamarind and chilli and accompanied by other ingredients, particularly egg, chicken and prawns. There is also another kind of nasi goreng which is made with ikan asin (salted dried fish) which is also popular across Indonesia. Nasi goreng is sometimes described as Indonesian stir-fried rice, although it is also popular in Southeast Asia. Beyond the Malay Archipelago, it has gained popularity through Indonesian influence in Sri Lanka and via Indonesian immigrant communities in Suriname and the Netherlands. It is distinguished from other Asian fried rice recipes by its aromatic, earthy and smoky flavor, owed to generous amount of caramelized sweet soy sauce and powdered shrimp paste, and the taste is stronger and spicier compared to Chinese fried rice.Nasi goreng has been called the national dish of Indonesia, though there are many other contenders. It can be enjoyed in simple versions from a tin plate at a roadside food stall, eaten on porcelain in restaurants, or collected from the buffet tables of Jakarta dinner parties.In 2011 an online poll by 35,000 people held by CNN International chose Indonesian nasi goreng as number two on their 'World’s 50 Most Delicious Foods' list after rendang.

Its very tasty and yet takes no much time to make at home, The recipe i have here is just thinly sliced Beef sirloin rump tip steak , tri color peppers ,white onions and garlic and ginger. For the sauce I used soy sauce (Tamari ), corn starch ,brown sugar and some worcestershire sauce (optional).
