225 G, 8 oz long grain brown Rice 5 ml 1 tsp ground turmeric. 1 Stick cinnamon. 1 Bay leaf. 4 Green cardamum pods. 6 Black pepper corns. Put all the ingredients in a saucepan with enough water and bring to the boil. Cook for 35 minutes or until the rice is tender.

For cooking rice Long grain rice (Uncle Ben) – 500 gm / 2 cups Olive oil – 75 gm / 5 Tbspn Bell pepper chopped (green & red) – 2 nos. Holland red chilli diced – 1 no. Spice mix – 32 gm / 5 Tspn Veg stock cube – 1 cube Salt – 14 gm / 2 Tspn Passata sauce – 100 gm / ½ cup Water – 850 gm / 3.4 cup Lemon juice – 30 gm / 2 Tbspn
METHOD
To make spice mix • Put all the mentioned ingredients in spice mix in a small mixing bowl and mix it altogether.
For cooking rice • In a pot pour olive oil, when the oil is hot put chopped bell peppers and Holland red chilli. Saute for two minutes. • Add spice mix, saute for a minute. • Add veg stock cube and saute for another minute. • Now add salt and passata sauce, saute and cook for a minute. • Now add in uncle ben long grain rice and mix it altogether for a minute. • Add water, when the water start boiling add lemon juice. • Once the water is reduced and absorbed cover the pot with aluminium foil and air tight lid. • Cook it in the slow flame for 6 minutes then switch it off and rest it for another 6 minutes before opening the lid. • Now the spicy rice is ready and serve it in a side bowl.

Ingredients:
1. 2 Cups of Rice
2. 1/2 an Onion (finely chopped)
3. 1/2 Red Bell Pepper
4. 2 Chicken Stock Cubes
5. Peas (handful)
6. 1/2 tsp Cumin
7. 1/2 tsp Turmeric
8. 1/2 tsp Paprika
9. Chilli powder – to taste
Recipe:
1. To a frying pan, add oil, onion, red bell pepper, one chicken stock cube, cumin, chilli powder and paprika. Stir fry on high for 3-5 mins till aroma.
2. Add 2 cups of rice, 4 cups of boiling water, chicken stock cube & turmeric.
3. Bring to a boil & add peas before covering the pan with a lid. Let the rice cook for about 15-20 mins before removing lid & allowing the rice to simmer.
4. Serve & enjoy!

INGREDIENTS
For the Peri Peri Chicken:
• 400g raw boneless skinless chicken thighs (about 100g per thigh) • 80g Nando’s Medium Peri Peri Marinade • 1 tsp oregano • 1-2 tsp smoked paprika • 1 tsp salt & black pepper • 1 tsp onion powder • 20g light butter or cooking spray
For the Spicy Rice:
• 120g uncooked washed basmati rice • 1 diced white onion • 1 diced red bell pepper • 1 tsp salt & pepper • 1 tsp paprika • 1/2 tsp chilli powder • 1 tsp cumin • 1/2 tsp turmeric • 50g tomato paste • 250ml water or chicken stock
Garnish:
• Chopped coriander / cilantro • Peri Peri sauce (Optional)
Note: - You can marinate the chicken overnight for better flavour and cook the next day - You can cook the rice in a pot but for this recipe I prefer to cook it in a pan
