How To make Spicy Rice Pilaf with Turkey
1 c Brown rice
1/2 ts Cumin seeds
1/4 ts Ground ginger
1/4 ts Ground cinnamon
4 Cardamom seeds
4 Whole cloves
1 tb Vegetable oil
2 c Turkey stock or water
1/4 c Dark or golden raisins
2 c Chopped cooked turkey
1/4 c Pine nuts or chopped cashews
Toast cashews if using. Saute the rice, cumin seeds, ginger, cinnamon, cardamom seeds and cloves in the oil in a saucepan until the rice is browned. Add the stock or water and bring the mixture to a boil. Lower the heat and simmer for 45 to 50 minutes or until the rice is cooked. Add the raisins, turkey, and nuts to the rice mixture. Ingredients For Turkish Rice Pilaf With Orzo:
2 cups Baldo, Osmancık, Calrose, or similar long-grain rice that doesn't contain too much starch
1 tsp salt, 2 cups hot water to soak
4 tbsp orzo pasta
1 heaped tbsp butter
4 tbsp olive oil
salt to taste
3+1/4 cups hot water (or you can use some chicken stock)

Ingredients (for 4 servings)
- 700g Raw Cubed Chicken Breast
- 1 tbps Oregano
- 1 tbsp Cumin
- 1 tbsp Paprika
- 1 tsp Chilli Powder
- 1 tbsp Garlic Powder
- 1 tsp Salt
- 1 tsp Olive Oil
- 1/2 Lemon Juice
Cook on high heat for 3-4 mins each side till golden brown
- Shredded Lettuce
- Chopped Tomatoes
- Garnish Coriander (optional)
Garlic Sauce
- 150g Fat Free Greek Yogurt (any yogurt works)
- 50g Light Mayo
- 2 Minced Garlic Cloves
- Chopped Coriander/Cilantro
- 1/2 tsp Cumin, Salt, Pepper
- 1/2 Lemon Juice
You can store this sauce for multiple days in a bottle or container, perfect to prep in batches
Golden Rice
- Basmati Rice (207g uncooked gives about 560g cooked weight | 140g Cooked Rice per serving)
- season with Turmeric, Cumin, Paprika, Garlic, Salt
- Add water then bring to a boil then simmer on low heat for 8-10 mins till fully cooked
Distribute into 4 equal servings and enjoy!

Important notes
- When reheating the meal prep, i would put the sauce and lettuce seperately then heat the rice and chicken in a microwave
- You can store the sauces in little containers in the meal prep box

Turkish Rice Pilaf Recipe (Hints To Make A Fluffy And Full Of Flavored Pilaf)
Turkish rice pilaf (pilav) is most traditional and well known side dish in Turkish Cuisine. There many rich varieties including orzo pilaf but this plain pilaf made with butter and olive oil has its own flavor and accompany with many dishes like doner kebab, chickpeas or white beans with meat dishes.
Ingredients for Rice Pilaf : (6 serving size)
2 cups long grain rice (In Turkey we usually use baldo or osmancık rice, calrose may also be used)
1 tsp salt to soak in the water
about 3 cups hot but not boiling water (for soaking)
For the cooking:
2 tbsp butter
3 tbsp olive oil
3 cups boiling water
1 to 1+1/2 tsp salt (depend on your taste and health:)
dash of sugar
5-6 drops of lemon juice
Note:To cook the pilaf try to use wider and shallow pan if possible

Domatesli Pilav is a Turkish rice pilaf flavored with sun ripened tomatoes and is at its best when achieved a golden crusty crispy bottom. It's a famous summer dish and interesting enough, it's quite popular to serve it with cold watermelons which in a way compliments the texture and the flavors. This rice dish is one of the favorite pilafs for Turkish people and is made with simple staple ingredients.

Ingredients:
• 1 cup rice (baldo, arborio or similar), 250 g
• 2 large tomatoes, grated or canned sun ripened tomato puree, 400 g
• 4 tbsp butter, 60 g
• 2 tbsp olive oil or sunflower oil
• 1.5 tsp salt (extra to soak the rice in water)
• 1 tsp sugar
• 1 cup hot water, 220 ml (+ 1 liter for soaking the rice)
Instructions:
1. Soak the rice in hot water with 1 tsp salt, stir and let it wait for 45 minutes
2. Wash and rinse the rice thoroughly 3 – 4 times until the water comes out clear.
3. Drain in a strainer until the rice is almost dry
4. Peel and grate the tomatoes, or alternatively use 400 g grated canned sun ripened tomatoes
5. In a large pan, heat 2 tbsp oil
6. Add the grated tomatoes and 1 tsp sugar
7. Stir and simmer for about 30 mins until the liquid is reduced and the oil starts to separate
8. Remove the tomatoes, add 4 tbsp – 60 g butter to pan
9. Once the butter is melted and hot, add the rice, 1.5 tsp salt
10. Gently stir without crushing the rice and fry until the rice is translucent and starts to clump together
11. Add back the cooked tomatoes and 1 cup hot water, gently stir and cover the lid
12. Bring to a boil and then switch to low heat, cook covered for 15 mins until the liquid is absorbed
13. Open the lid, gently stir the top parts of the pilaf,
14. Poke couple of small holes in the rice with back of the spoon, cover with a towel and close the lid.
15. Heat up the pilaf 2 - 3 more minutes to crisp up the bottom.
16. Remove from the heat and let it rest covered for at least 20 minutes for the flavors to develop
17. Serve the pilaf in a bowl together with pieces of the crispy bottom
