How To make Spicy Pumpkin Butter
1/4 c Dark brown sugar, packed
2 tb Sugar
1/4 c Water
1/2 ts Allspice
1/4 ts Ginger
1/4 ts Cloves
1/4 ts Nutmeg
1/2 ts Cinnamon
1 1/2 c Pumpkin
trY USING THIS ADDED TO WHIPPED CREAM TO GARNISH PUMPKIN PIE Combine the two sugars, water, allspice, ginger, cloves, nutmeg and cinnamon in a 4-cup glass measure. MW on HIGH 3 minutes; stir. Add pumpkin and MW on HIGH 5 minutes. Let cool and refrigerate. Keeps several weeks in refrigerator or can be frozen. YIELD: 2 cups NOTE: Use this as you would apple butter.

Pumpkin Butter Recipe
4 cups pumpkin puree (two sugar or pie pumpkins)
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1/4 tsp. ground ginger
1 cup brown sugar or to taste
1 Tbsp. butter
Preheat oven to 375 degrees F.
Directions:
Rinse pumpkin under running water. Then slice the pumpkin in half. Scoop out the seeds and save for roasting later.
Place each pumpkin half, cut side down on a foil lined baking sheet. Bake 50 minutes or more or until a fork inserts easily into the flesh.
Take pumpkin out of the oven and let it cool. Scrape the pumpkin from the skin and place in a food processor. Blend until the pumpkin is pureed.
Pour the pumpkin, cinnamon, nutmeg, cloves, ginger, butter and brown sugar into a crockpot. Stir and set the temperature to low. Cover and cook for 3 to 4 hours.
When it's done you can store it in the refrigerator or freeze.

This homemade pumpkin butter recipe is the easiest, most delicious fall spread to make. Pumpkin puree and warm baking spices are cooked down to create a thick, glossy spread! It takes 20 minutes to make and keeps well in the fridge. It can be used in so many ways, from layering warm on toast, to mixing into chilled yogurt, or as the base for a fall salad vinaigrette.

Using Winter Squash to Make Spicy Pumpkin Butter Recipe on the Homestead! | DIY Recipe Made Easy
Using my Winter squash to make pumpkin butter is easy! You will need:
4 Cups of Squash or solid pumpkin 2 Tbsp Lemon juice
3/4 Cup apple juice 1 1/2 tsp nutmeg
1/2 Cup apple cider 1/2 salt
1 1/4 Cups brown sugar packed 1 1/2 tsp cinnamon
1 tsp ginger 1 tsp cardamom
1 tsp cloves 1 tsp butter
In heavy saucepan combine all ingredients on low to medium heat and render down to a thick consistency. Stir frequently, while uncovered for about 20 min. Careful it will splatter. Now it's ready for you to ladle into sterilized jars, remove the air and wipe the rim of jar and leave a 1/2 inch headspace.
Process in a boiling hot water bath with 1 to 2 inches of water above canning jars for 20 minutes. Remove and cool jars and check the seals. Now you can use these or store in cool area for up to 4 months. Make sure and check the seals carefully before using. Or you could freeze the pumpkin butter in containers in the freezer for up to 6 months. However if you have a freeze dryer you could freeze dry it, and reconstitute as needed over a longer period of time.
Note it is not recommended to can pumpkin because its a low acidic food. Care must be taken to check for spoilage when a new jar is opened.
