How To make Spicy Fruit Scones
1/3 c Margarine or butter
1 3/4 c All-purpose* or
-Whole wheat flour 3 tb Sugar
2 1/2 ts Baking powder
1/4 ts Salt
1 Egg, beaten
1/2 c Diced fruits, chopped figs
-or Dates 5 tb Half-and-half
1 Egg, beaten
3/4 ts Ground cinnamon
1/8 ts Ground cloves
*if using self-rising flour Omit baking powder and salt Heat oven to 400 degrees. Cut margarine into flour, sugar, baking powder, cinnamon, cloves and salt with pastry blender until mixture resembles fine crumbs. Stir in 1 egg, the fruits and just enough half-and-half so dough leaves sides of bowl.Turn dough onto lightly floured surface. Knead lightly 10 times. Roll or pat 1/2-inch thick. Cut with floured biscuit cutter, or
pat dough into rectangle and cut into diamond shapes with sharp knife. Place on ungreased cookie sheet. Brush dough with 1 egg. Bake 10 to 12 minutes or until golden brown. Immediately remove from cookie sheet; cool. Split scones. Spread with margarine and serve with preserves if desired. ABOUT 15 SCONES; 130 CALORIES PER SCONE.

Fruit Scones
makes 8 to 10 scones
500g x Self-raising Flour
75g x Caster Sugar
125g x Butter
1tsp x Baking Powder
2 x Eggs (+ 1 for glazing)
90g x Dried Fruit
Milk to Bind
Chantilly Cream
300ml x Double, Heavy or Whipping Cream
30g x Icing Sugar
1 tsp x Vanilla Extract
Strawberry Jam and Fresh Strawberries
1. Place the flour, baking powder, sugar, and butter into a mixing bowl. Rub between your fingers and thumbs until it resembles breadcrumbs.
2. Chop the dried fruit as small as you can and add to the flour mixture. Mix and make a well in the centre.
3. Crack in two eggs and add a splash of milk. Mix with a fork until it comes together to form a dough. You may need to keep adding small amounts of milk until you get a firm dough. If the mix becomes too wet just add more flour until it feels firm to the touch.
4. At this stage, preheat the oven to 170°C and lightly flour a workbench. Turn out the dough and press together with your hands to form a round shape. Roll out using a rolling pin to 1.5 inches in thickness.
5. Grab a cookie or sone cutter and being to cut out your scones. Press down firmly without twisting the cutter. Place the scones onto a baking sheet lined with parchment paper.
6. Glaze the tops of the scones with a beaten egg. Place in the preheated oven and bake for 18 to 20 minutes. Place onto a cooling rack to cool.
7. For the Chantilly cream place the cream, icing sugar, and vanilla extract into a mixing bowl and whip using a whisk until it holds its shape.
8. Once cool break or cut the scones in half and fill with a good dollop of chantilly cream and a spoonful of strawberry jam. Finish with some slices of fresh strawberries.
