5 CRAZY But TASTY Sourdough Discard Recipes That Will Amaze You (NOT BREAD OR BAKED GOODS)
These are the sourdough discard recipes you've never thought of! If you want some creative and delicious ways to use your sourdough starter without making some version of bread, pancakes, muffins, or other baked goods…keep on watching. Starter is sticky, acidic, and has a complex umami flavor that can complement a variety of foods. These properties make it super versatile in the kitchen and I’ll show you some crazy but tasty discard recipes.
VEGAN NACHO CHICKPEAS RECIPE
3.5 cups of chickpeas or about two 15 ounce cans (unsalted, drained and rinsed)
¼ cup starter
¼ cup nutritional yeast
¼ cup olive oil
1 packet of taco seasoning (my favorite is McCormick’s which already has salt in it)
Roast at 400 deg F for 40-45 minutes until browned to your liking
CORNMEAL CRUSTED BROCCOLI RECIPE
2 broccoli bunches
2-3 Tbs starter
½ tsp himalayan pink salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika
2 Tbs olive oil
2 Tbs cornmeal
Optional flaky sea salt, lemon wedge
Roast at 400 deg F for 30-35 minutes
HONEY SESAME WALNUTS RECIPE
1 lb raw unsalted walnuts or 3 ¾ cups
¼ cup starter
¼ cup grapeseed oil
1/2 cup honey
1 cup of sesame seeds (i’m using half white sesame and half black sesame)
1 tsp of flaky sea salt
Roast at 375 deg F for 35-40 minutes until caramelized
MEATBALL RECIPE
1 lb ground beef
1 tsp himalayan pink salt
1/2 tsp ground pepper
2 tsp Italian herb mix
1 tsp garlic powder
1 tsp onion powder
2 heaping Tbs starter
Bake at 375 deg F on top rack for 20-25 minutes until browned
CHICKEN RECIPE
1 pound of boneless skinless chicken thighs, cubed
2 heaping Tbs starter
2 Tbs of dijon mustard
½ tsp himalayan pink salt
½ tsp of pepper
½ tsp of garlic powder
½ tsp of onion powder
1 Tbs of dried rosemary
2 Tbs of olive oil

Sourdough Cornbread with Michael's Home Cooking
This recipe for Sourdough Cornbread is excellent, I sure hope you try this moist and delicious recipe. See full recipe in description below. Here is the Sourdough Starter recipe:
Ingredients:
1 cup sourdough starter
1/3 cup vegetable oil
1 egg
1/4 teaspoon soda (baking soda)
1/4 teaspoon salt
1/2 cup all purpose flour (self rising flour is okay as well)
1 cup cornmeal (white or yellow)
Mix the starter, oil and egg.
Add rest of ingredients and mix until blended well.
Pour into an 8 inch square pan.
Bake in preheated 350F oven for 25 to 30 minutes.
